Condensation?

I always keep my BC cakes in the fridge. I pulled out my husband's birthday cake today and in just a few minutes it had condensation on it. So, we ate what we wanted and put it back. If I had left it out would it have evaporated and been okay? I'm worried because I have a cake to do for someone else tomorrow and I don't want it to do that. What did I do wrong? What can I do to fix it? Thanks in advance!

there is no reason to put BC cakes in the fridge unless there is a perishable filling in it. As for the condensation, was there an extreme tempeture change, for instance was it extremely hot in your house today?

At work this happens all the time. I live in Louisiana and the humidity is aweful here. At work we have been having lots of problems with the cakes sweating. If you put it in the fridge just box it first. The cardboard from the box will absorbe the moisture. Hope this helps

I've left my buttercream covered cakes in the fridge without having problems. I have no idea why other people do.

Yes, it was around 80 degrees or so today. I know I don't have to keep them in the fridge, but I think it tastes fresher if it has been kept there. I usually have them in a box or cake carrier, but this was a 3 tier piece of cake cake so I didn't have anything to keep it in.

I had this problem too this week! It was warmer in the house so I thought it'd be better to keep the cake in the fridge so the BC wouldn't "melt" off the cake. I took it out and it was sweating. It never evaporated off like I thought it would and left this glistened/wet look. :(

So, is it okay/better to leave the cake out even if it's pretty warm inside the house?

AWhen I take any of my cakes out of the fridge, I always make sure that the AC is on and I also put the cakes directly in front of a fan (make sure the fan isn't dusty of course...haha) and that helps to dry the condensation as it forms.

But as others have said it is much easier to not have to refrigerate them if the fillings aren't perishable. :-)
