Hi! Please, can anyone help me? I live in India. I have been asked to bake a 8kg Ferrero Rocher cake. How much should I charge for that? Usually I charge Rs. 350 for a simple 1/2 kg (approx 1 pound) cake with buttercream. Is that alot? And if a simple cake with buttercream would be Rs. 350 then Ferrero Rocher cake would actually be expensive, right? So how much should I charge for a 8 kg (approx. 16 pounds) Ferrero Rocher Cake with Nuttella Ganache topped with Ferrero Rocher Chocolates?

Please help!

You probably haven't had any replies on this because people have no idea how much you should be charging. The best approach would be to work out your 'per slice' price and go from there. i.e if your 1/2 kg cake serves 10, then how many will your 8kg cake serve and work back to a price from that.

Sounds like a great cake, I'd love to see a picture!

thnks for ur replies.
Actually I got this recipe from the net. I have not yet tried it. Thought will try it 1st before I confirm the order. Here it is:

Whisk 3 1/2 cups cake flour, 1/2 cup cocoa & 1/2tsp salt. Place 2 cups butter & 2 1/4 cups sugar in a bowl. Beat till well blended. Beat in 4 Large eggs, 1 at a time. Add in 1 1/2 tsp vanilla xtract. Add flour mixture alternating with 1 1/4cups buttermilk in 2 batches. Combine. Place 2tsps baking soda with 2 1/2tsps vinegar. Add to batter. Run machine 10seconds. Bake 20-25mins. Cool.
For Filling, place 200gms Lindt sweet Chocolate chunks in a bowl with sifted 1tbsp cocoa powder. Heat 2/3 cup heavy cream to a boil. Pour over the chocolate. Stir till smooth. Cool. Add crushed 15 Ferrero Rochers.
For the Ganache, melt 1 cup nuttella & 1 cup heavy cream. Stir till smooth.

Spread filling between the cake & top with ganache. Decorate with Ferrero Rocher chocolates.
Or make cupcakes from the batter, put the filling inside & top with ganache.

Most people over here would not be familiar with the currency in India. A dollar over here goes a long way in some countries. In my opinion, all you have to do as add all your expenses plus how much you think is enough as a profit and there is the price for your cake.

Depending on the price of Nutella (is it locally made?) and the price of the Ferro Rocher you are looking at Rs.5600 for the cake going by your rates which dont sound too high. A 8 kilo cake should be pretty large, what size in inches were you thinking of? What kind of event is it?

hi! thanks for ur reply.
actually, yes my cost is coming upto approx. Rs. 6,500. this person called me saying he works in a bank & they have these parties every now & then. I was thinking of 3 tiered rectangular cake. i dont have a big oven to make 1 big cake. if they like the cake they would give me more orders in future. So if the cost itself is Rs. 6,500 then how much should i charge?

TIA

Wow..that is one expensive cake! I can't imagine why just your ingredients are costing you that much? When you say 3 tiered, what sizes are you thinking? Rectangular means that you are stacking 3 slab cakes?

I would not be swayed with your customers claim that they may order future cakes-if your costs are that high, charge that and your profit.

Hi Chandni,

It's very difficult to price the more elaborate cakes in India. We price by weight rather than by the number of servings.

What I do, is check out the prices of similar cakes available in the best confectionary outlet (a five star hotel like Taj) and a middle-of-the-line one and then price in between somewhere. But this is for the basic cake only. If you are adding imported ingredients like Nutella and FR Chocolates and design elements , then you need to raise the price appropriately.

Your cost is Rs.6500 (131 USD) for an 8 kg cake. That is about Rs.800/- per kg.(16 USD).

Normally, my rule of thumb is to multiply the cost by 3, where 1/3 covers ingredients and 2/3 covers my profit, effort, and expenditure on equpiment(reusable) and utilities.

But, in your case, I think a charge of Rs.2400 per kg (48 USD) may be considered extremely high. Your 8 kg cake would cost Rs. 19200/- (USD 386)

Also, your post seems to indicate that you are making a tiered cake and stacking for the first time. If I understood that right, a practice cake might be in order.

Like Monkess said, don't be swayed by promises of further orders.

Ask for a deposit and full payment before delivery. Corporate clients are notorious for delaying payments endlessly.

Best of Luck,
Karen

thank u for ur replies.
Actually I calculated evrything ingredients, utilities etc and so the cost Rs. 6,500. So now how much shud I add for my profit, Rs. 1,000 or Rs. 1,500? Making a total of Rs. 7,500 or Rs. 8,000 for a 8kg Ferrero Rocher Cake
