I attempted to make a 9x9 gift box cake with red velvet cake and for some reason my cakes didnt rise or maybe I just thought they would be bigger. I then attempted to use whatever I had in the kitchen to make more layers and I came out with some chocolate cakes. Only thing is they were really soft and when I went to take it out of the pan it broke in half icon_cry.gif

So today I start over. Good thing the boyfriend calmed me down as I was in tears saying "My cake career is over before it even started". Yes I was a bit dramatic LOL.

I am so sorry that this happened to you. Get yourself together and get baking. You can do it!! Just think it could always be worse....I'll share with you my recent cake tragedy.....

My pan did not fit in my oven (which I thought was standard but if you have a convection oven apparently it's not due to the fan in the back)....I realized this after I made the batter.....threw that pan of batter out. Then, beat the pan in and rigged the oven so it would fit....pan then warped (yes it was a Wilton pan). Threw that pan of batter out. Then, decided another way to rig my oven thinking 3rd times the charm. This time half of the bottom of the cake was burnt and I mean BLACK. Then, I had another cake that did what yours did half came out of the pan and half stayed in. Another layer of cake ruined....so I stood in my kitchen in tears eating the cake that stuck to the pan. I've never been so upset.

Next day shipping and $88 later I had 2 pans that fit my oven oh and not too mention 3 16 in cake pans full of batter lost.

I thought you might enjoy hearing my story...maybe it will make you laugh and feel better! icon_lol.gif

Oh nooooo!! That does sound a whole lot worse than mine. I figure you can only learn from your mistakes so I am trying to keep pushing. I mean it IS my first cake. I crumb coated the red velvet and will be stoping at the grocery store to get more ingredients to make the other half. Tomorrow I will decorate it with fondant and pray it does not crumble LOL. Thanks for sharing your story I do feel alot better!

glad I could help! I'll say a pray for you tomorrow that all goes well. I have a wedding cake to do ya know the one that I wasted all the ingredients on. You want believe it...she now wants to change the cake flavors which is fine I'm charging her and I want the bride to be happy. It's just too funny after all that, now I get to bake 2 tiers of it again tonight. How I do it I don't know icon_cry.gif

Don't get too frustrated it will all work out.

Thanks for the info on the pans SpoonfulofSugar I did not know that they wouldn't fit in convection oven. I have made a 16 inch cake before, but I used the oven in the office that I work in. It isn't a convection oven but mine at home is (where I usually bake my cakes). I guess if I make a 16 inch cake again I will bake it at the office.

don't forget to line that pan with a greased piece of wax paper to help it come out of the pan in one piece.

Well last night I decided instead of stacking the two smaller red velvet cakes onto the bigger chocolate cakes, I would just do two cakes side by side since the choco cake cracked. I covered them both with cream cheese frosting and then covered with fondant. Being my first time making and using fondant it came out perfect or from a newbies eyes perfect. The cake was not leveled so its a lil crooked but the fondant gave it a cleaner finish and I used some red and yellow icing I had to decorate them. I will post pix on Monday when I get my camera cord. Thanks for all the inspiration and help. icon_biggrin.gif

Sorry you had trouble. I am sure the salesman thought I was nuts when I took my 12x18 and 15inch hex pan in to test out my GE profile convection oven before buying it. I can't get a 16 inc pan in my oven so if I ever have to do a 16inch round I will have to do the half round and for square eight 8inc squares. I once made a 20in square 2 layer with 10inch pans man was that thing heavy.
