Lemon And Berry Cake, Your Thoughts??? Please?

Ok, so is a lemon cake with a blueberry/raspberry and cream filling with a lemon buttercream frosting a gross idea?

Anyone make a lemon and berry cake before? Ive seen it a few times, but does this actually taste good? A friend of mine loves citrus cakes and also loves fruit fillings. Obviously you can see my intention is to squeeze everything into one cake. Bad idea?

I've made a lemon cake with a lavender-berry filling with white choc. SMBC and that was really good. I think your plan sounds good too.

I made a lemon cake with raspberry filling and it was good.Nothing too weird about the combos your talking about.maybe experiment before?

Lemon cake with berry filling is my number one most requested cake. I use either frozen raspberries or mixed berries...both delish!! If you torte your cakes it's really great to use both berry filling and lemon curd, looks pretty too. yummy icon_smile.gif

I made one yesterday! Mine was Lemon cake with Raspberry filling and cream cheese icing....it was yummy!

I recently made a lemon cake, blueberry filling with the white chocolate almond buttercream (from the recipe section here - minus the almond, used vanilla instead).

I'm making it again for Saturday but with blackberry filling. Great flavour combo!

This is one of my favorite cake combos! For mine I take four layers of vanilla cake with two layers of lemon mousse, and one layer of raspberry or strawberry pastry filling (sleeve stuff) and berries if they are in season.

Oh you guys are making me feel so much better!

I was thinking of using the Wilton strawberries and cream recipe, but changing the berries to raspberries and blueberries. The recipe calls for frozen berries with syrup and cream. They are cooked together, so its a creamy recipe...do you think it would still be good with the lemon even though it is not a jam type filling? Im so nervous. Im getting ready to make it after 7pm when my son goes to sleep. icon_smile.gif

Oh and all those cakes you guys mentioned sound delicious!!!!! I was just going to do a lemon buttercream. I have the ingrediants on hand. icon_smile.gif Of course all that white chocolate goodness sounds delicious...oh man this job is not good for my waistline.

For the blueberry filling...I just warmed a little water, added a bit of cornstarch dissolved in cold water, brought to a boil. Added some frozen blueberries and let cook a couple minutes. Took of the stove and cooled.

I've done both lemon with raspberry filling and lemon with blueberry filling and I love both combinations. I have a recipe for a yummy lemon blueberry pound cake. It got me thinking about using the preserves for a lemon cake.
