When Should I Start?

I'm making a cake as the gift for my sister in law's wedidng on the 18th. I want to do a calla lily topper with some callas on the rest of the cake too. How far in advance can I make the flowers?

I've never done calls before so if anyone has any pointers...

You can start now on the flowers, they are one of the easier gumpaste flowers to do. Search right on this site i'm sure there are instructions for them. If no Wilton's site has some.

I just watched Edna's videos on YouTube. I think I'm set now icon_smile.gif

How far in advance would you all bake your cakes? I don't mind freezing cakes but I've never frozen for more than 2-3 days. How long can I safely leave them in the freezer???

I am so glad that you found Edna's videos on youtube - i was going to suggest that!

For a Saturday wedding - I "personally" would bake on thursday AM and allow to cool and then tort and fill that night - I would also make all my icings and any gumpaste/fondant work (your callas) - that way on Saturday all you have to do is ice and assemble. hope that makes sense - I know that everyone has their own way of doing things. Find your own groove!!

Start the flowers right now. The cakes can easily be baked 2-3 days ahead and frozen. Depending on your freezer, they might be OK much, much longer, but it really has a lot to do with your freezer.

Thanks. I'm so excited for this cake. I hope the vision I have in my head translates to the actual! It will be very black&white and not your traditional callas.

After watching Edna's videos on the flowers, bows, icing, etc I'm all pumped about doing any cake! I've been meaning to watch them for about 6 months and am glad I finally took the time.

And don't forget to make extra flowers to make up for any breakage you may have. I also saw Edna's video on youtube. She is so awesome!!!
