Angie----

We bought the silicone pearl mold maker...They come in 3", 4", 6", 8", and 12"....They're kind of costly, initially; however, when it comes to not have to roll out individual pearls, it comes in quite handy.

You put your fondant/gumpaste or gumpaste into the mold, pop in the freezer for 3-5 minutes, take out and re-load with a new batch. You can cut them into individual pearls with a knife, too.

The company that made those molds also makes 2 sizes of braided rope, too.

Another way you can do it is to roll some fondant into a snake, and then cut it up into equal size bits with a knife, then roll each bit into a ball.

Didn't check Earlene's link, but it might be the method of rolling fondant to same thickness then using whichever size frosting tip you want to cut circles. Roll each circle into a pearl. The consistent thickness of the fondant is key to the pearls being the same size so you might want to invest in the rings you place on your fondant rollers that regulate thickness.

Or roll out some fondant and cut with one of your large round tips that way they are all the same size. But I use a silicone mold which I love. I dont pop it in the freezer and they come out easily but they are easier to handle if you pop it in the freezer

Check Earlene's site. She uses a big round piping tip, like a #10 or #12, etc., and then roll each cut circle into a ball. Also, use bamboo skewers on each side of your fondant when rolling to get even thickness.

I roll my fondant out (to even thickness) and then use a round tip to punch out circles. then roll them in my hand to make a ball. If the balls aren't big enough I will double or triple the circles. It gives me the same amount of fondant for each ball.

Sweetguys,

Where did you order the silcone molds from?

We have a wholesale account so we get them from CK Products...

However, if you're a home baker, you can go to Country Kitchen Sweetarts or Global Sugar Arts...

Look for the blue silcone molds by CK...They look like long thin rectangles...What we like about them is that each mold is a different size measured in millimeters and the numbered millimeter is marked right on the side for easy finding in the PILES of cake stuff we have...

This is a little painstaking, but it actually goes faster than it sounds. For whatever reason, even when I roll out what seems like an even line of fondant and measure my cuts, there's still a little variance in size. SO - I take a metal measuring spoon (I like mine 1/4 teaspoon), fill with fondant, and level it with my finger (or butter knife). I do these one at a time and hand roll each one. It's so worth the time because they all come out the exact same size!

I have a clear acryilic ruler that I use ALL the time with my caking. I just roll out fondant of an even thickness and cut squares that are all the same. It is SOOOOOOOO much easier than using a circle cutter or trying to pick out fondant out of a tip. Hope that helps you..it's saved my hands and palms from SO much pressing down. icon_smile.gif
