I finally got to try making some Whoopie Pies! I cheated - please forgive me icon_redface.gif I used one of the cake mix cookie recipes from Recipezaar. I think they have a great consistency and flavor. I did use one of the cooked flour recipes on here - I tried to find it again so I could give credit to whomever posted it. But now I can't find it. Anyway, they turned out SO good!! I have to find a place in the fridge to hide them. They look adorable.
Next I want to try the oatmeal, then the strawberry with a cream cheese filling. What is y'alls favorite cream cheese recipe? We have a Wednesday night supper this week - I think I'm serving Whoopies!!
On a slightly serious note - does it offend anyone for me to call them Whoopies when I'm using the cake mix for the cookie part? I would gladly call them Florida style Whoopies or something along those lines. I will readily admit that it's not an authentic recipe, I just don't want to upset anyone!

Thanks for all the great ideas and help! icon_lol.gif

Thanks Fiddlesticks! I just finished eating another one...and a half! Thank goodness my oldest came along and ate the other half! I think I could very easily make myself very sick off of them! icon_lol.gif

I do have a question - my filling never firms up very much. I know that they're supposed to be messy. But I don't think I can serve them at church with the filling as loose as it is. Maybe I needed to cook the milk/flour a little longer? It got pretty thick. Any ideas? The flavor is perfect, I really don't think I could find one that I like any better. TIA!

Are you useing the recipe Teekakes posted for filling ? If you think you cooked it as thick as you needed to you can fold in some marshmallow fluff it would taste just about the same but thickin it up some, or ask her what she thnks ? Did you add enough p.s.?

I'm not sure which recipe I used icon_redface.gif I wrote it down, I thought I got it from this thread. But when I went back to credit the author I couldn't find it! These are the ingredients - 5TB flour
1 cup milk
1 cup Crisco
1 stick butter
1 cup 10X
1/4ts salt
3ts vanilla
1ts butter extract

Ok, as I'm writing the ingredients, I actually read through the WHOLE recipe. Now I'm really embarassed icon_rolleyes.gif I kinda skipped over the bottom part where it says to add 3 more cups of powdered sugar. What a nitwit!! I did add a total of 2 cups. I guess I'll try adding some more next time! I hope that it doesn't make it too much sweeter. The flavor is SO good! And if anyone recognizes this as their recipe please let me know and thanks, it is very good!
I think I'll go to bed now and read ALL the way through my notes tomorrow! Good night everyone,

Melissa

Here is a mock whipped cream recipe that many people find delicious. Sometimes I use this on cake because I just want something a little less sweet than buttercream. This can also be a great filling. Hope this helps!

MOCK WHIPPED CREAM FROSTING

1/4 cup flour
1 cup milk
1 cup powdered sugar
1 cup shortening
1 tsp vanilla
1/2 tsp butter flavor
1/4 tsp almond extract

Blend milk and flour together in a blender for a minute or so or less. (This is a very important step!) Cook milk and flour over medium high heat, stirring constantly, until very thick. Remove from heat and dump into a bowl. If there are any hard pieces on the spoon or in the bottom of the pan, discard them. You want a smooth mixture in the bowl. Place a sheet of plastic wrap over the bowl and flatten the wrap down onto the surface of the custard, pushing out any air. Cool to room temperature (must be cool!). Cream the sugar and shortening with the flavors for a few minutes or so on 4 or so, scraping down a couple of times. Add the custard into the mixer and stir for a bit. Then mix on high. Keep blending on high, stopping periodically to scrape off the paddle and scrape down the bowl. Continue to mix until the sugar is completely dissolved and you have the fluffiness you want. This recipe does not crust.

floridagal..Yes that is the recipe that Teekakes posted!
OMGOSH,, If you didnt add the rest of the P.S. I can see why you thought it was way to runny LOL!!!
If you add the rest and think its still to soft you can add as much as you want to its just a matter of how sweet you want it to be!
I use a recipe real close to this and again you can add a few spoons of marshmallow fluff or just more P.S.!

Darn it! I quit getting notices for my watched threads again! icon_mad.gif
Floridagal..............did you get the extra ps added before tossing it? Oh I can imagine without all of the ps the recipe calls for it would not only be to thin but must have tasted thumbsdown.gif too!

Teekakes,

I kept the rest of the filling. And I really liked the taste!! It was sweet enough with only the two cups of PS. It reminded me of real whipped cream. And with the sweetness of the cookies...YUM! I definetly want the filling to be thicker, but I don't want to add much more sugar.
Thanks for sharing the recipe, it is SO good. I think I have to go dip a vanilla wafer into the filling, that's mt fix until I can make some more. But since I've started another diet (today) I better stay away from your delicious filling! icon_rolleyes.gif

Today I am Whoopied out!! icon_razz.gif My family wanted more Whoopie pies. DH & DD wanted Oatmeal. Grandson wanted Chocolate. Oldest DD wanted Vanilla. So I made them all.
Now I have to tell you the Chocolate Fudge ones you see in the picture are tied for first place with the Oatmeal Whoopies. Diane, aka Fiddlesticks, gave me the recipe for those irresistable fudgy bites of goodness! Thank you again Diane!! icon_biggrin.gif The chocolate filling in them is my previously posted filling recipe I used in my Oatmeal Whoopies. To make it chocolate I simply melted down 1/2 bar of Bakers German Chocolate Squares then added some of the vanilla filling. If you want an excellent chocolate filling for Whoopies or any cake, you should give this a try. It is creamy chocolately goodness fit for all chocoholics! Such as myself! icon_lol.gif

I don't have much time for CC these days, but this was a really great thread. Fiddle--your input is always fun to read.
When you all wrap these in plastic wrap for the freezer are you using just a regular sized roll? I always end up with such a glob of plastic wrap that it looks messy on something like the smaller sized whoppie pies. Any thoughts on making this look a little nicer?
Thanks for a a great thread everyone.

Lily.. I have missed you !!!!!!!!!!!! Well so far I have not had any to freeze as they get eaten so fast..LOL!! But my plan was just reg ole plastic wrap and just for home I dont care if its not real pretty. What about just ziplocks? I have not explored into that yet.. Maybe some ideas will get posted.. Are you still molding figures etc??

Lily, I froze a bunch of mine! I use the extra wide plastic wrap and cut in half pieces makes it about right and they don't stick to the plastic! I do them like that & then pack in a foil pan with lids and then wrap around that! Could just drop them in a ziplock after the plastic to!
