Les Voilas ! These are the fudgy pudgys and the oatmeal cream pies which are the biggest sellers. I have Evelyn holding one of them in her open hand so you get an idea of the size.

I just found this thread and looked at your oatmeal cream pies! OMG.. they look delicious! They were my favorite lunch snack long ago in elementary school icon_smile.gif I'm going to have to make those!

I tried a recipe from my Amish cookbook and the oatmeal ones came out basically like big cookies. Does anyone have a recipe that makes nice fluffy oatmeal whoppie pies (or is this the way the oatmeal ones are supposed to be, fairly flat).

Oatmeal cream pies aren't supposed to be cakey, but if you take your favorite oatmeal cookie recipe, switch the baking soda to baking powder, change 1/2 or more of the brown sugar to white sugar, and chill the scooped cookies fro at least two hours before putting them in the oven, you will have a puffier, " cakey" cookie.

OK, I have devoted 2 days to these things and I finally think I have a decent recipe to make these from a box.

Box cake mix (I used chocolate)
3 eggs
1 and 1/2 cups water
1 package instant pudding (I used chocolate)
1/2 teaspoon baking soda

Mix it all together. Put the pudding in last or it will get very thick. I have been baking at 350 for about 9 minutes. Let them rest for about 3 minutes when you first get them out of the oven then move them to a cooling rack.

For the icing I have been doing a stick of butter, 1/2 cup shortening, about 3 cups powdered sugar, 1 cup peanut butter and a bit of vanilla and milk to thin it out until the consistency is right.

OMG. These things are sooooooooo bad. I just sent 20 of them to work with my hubby and the guys loved them. Thanks for the idea you guys. I never would have thought to make these. Pumpkin is next! lol

Just another thought. I remember reading another thread about mixing Jello in with cake mixes. That could probably apply here but I haven't tried that yet. Hmmmm. Cherry, Orange, Lime, the sky seems to be the limit with these.

Snarky, my mouth actually watered when I saw your whoopie pies! OMG! They look AWESOME! And they are a really good size too. Are you in the New England area? You make whoopies like a Mainer! Yum thanks Snarky for posting those!

Ok now I am thinking oatmeal whoopies with peanut butter filling like the Do Si Dos.

I made a carrot cake the other day for dinner and the entire time I was thinking about carrot cake whoopies. icon_rolleyes.gif I am not sure how to tweak my recipe though, because it already bakes up so dense I would be afraid to add more flour to thicken the batter.

A Do Si Do is the oatmeal and peanut butter sandwich cookie from Girl Scouts. They may call them something different now, but I always call them by their old school names like the Samoas, lol.
