Help Please !

Hello all you mini cake people! I am hoping someone will be able to answer a couple of questions for me....

First , lately my cupcakes are coming out of the oven looking just beautiful and as they cool they develope an "orange peel " look to the tops of them. They cool and get kind of wrinkley. It has happened with both my yellow and devils food flavors. icon_confused.gif Now I have been using a new, (used) , electric double wall oven with convection bake. (My love of a hubby installed for me recently) My cake layers do not do this.
Anybody ever have this happen?

Second, I have a couple of places interested in selling my cupcakes. Yay !! I am a recently licensed at home baker but lack the business know how in certain areas. I am learning as I go along. My question in this area is ,do any of you sell your cupcakes wholesale and if you do what determines the price (at which you sell them ) Do you sell them at a percentage discount like 10 or 25% below what you normally would sell them at.? Thanks for any guidance you can give ! I have to make a couple of phone calls back to potential buyers I would love to be able to not sound like a complete idiot when I return their calls. icon_lol.gif people are koo koo for kupcakes!!!

I really can't help you with anything, but I have a convetion oven. I found that I had to bake them on the top rack closer to the oven door than the back of the oven. The air blowing over my cupcakes was actually pushing the batter around so that my dome would be lopsided. And the cupcake surface was weird, but I don't know that it was orange-peel like. In fact, I don't like using convection for cuppies, just cakes.
