Hopefully someone can help me out. I have been asked to make cookies and brownies for a wedding instead of a traditional wedding cake. They are looking to serve 200 people. She said she just wants basic cookies and brownies. I don't normally sell cookies and brownies, and I have NO IDEA how much to charge for this. Could anyone give me some insight on this?

Hi Lisa

THere are alot of threads on pricing already (but I'm sure you've found them by now). The average seems to be $1 per inch for sugar cookies but that would be way too pricey for an order that big. Since they're not all sugar cookies you could probably go closer to $7-10 a dozen, depending on ingredients, time, your local economy, etc. The general rule of thumb is about 3 cookies per person. That's what my mom did for my and my sisters weddings, but that was with cake. I think without cake you would be looking at about 5-6 cookies apiece. So 200x5=1,000! Ouch. That's about how much we did for both weddings combined (they were small weddings). At $7/doz that would be about $585. (although... if the bride were to find that cookies would be more expensive than getting a cake she may change her mind and save you the effort!)

Some hair-saving tips are: make and freeze well ahead of time anything you can. Lean towards bar cookie type things (like brownies). Things go much faster when you're just baking once then cutting into bite size pieces. You can put the cut cookies/brownies into mini cupcake liners to dress them up.

Thanks so much for your help. The bride was saying that she only wanted 250 cookies for 200 people. I'll let her know that she will probably need many more than that!
