Howdy all. I'm not really a cake baker. I came to this site originally just for ideas on starting a home baking business. Then I got obsessed. icon_smile.gif Anywho, just baked my first cupcake recipe from scratch. Got the recipe here: http://www.joyofbaking.com/VanillaCupcakes.html I followed it exactly, including the lemon zest, and it just made the prettiest little domed cupcakes I ever did see! icon_smile.gif I'm gonna fill 'em with caramel and frost them with light green indydebi buttercream to celebrate St. Patty's!! Thanks to all of you for fueling my fire!

Hey Mellee, this site is addicting and gives so many ideas and tips. I love it. Your cupcakes did turn out nice, I love when they are all uniform in size. I like to use the 1M tip to get a nice big swirl of frosting. Happy baking!

The cupcakse look really nice. May I ask how you got IndyDebi's BC recipe? Sounds pretty popular, and I would like to try it! Put a picture in of your finished cupcakes so we can see them! icon_razz.gif

I don't do many cupcakes so this may be a dumb question but how do you fill a cupcake? That sounds good, do you scoop out the middle and then fill it? Thanks!

Wendy, that's not a dumb question. There are a few ways to do it. Some people just stuff a big tip straight into the cupcake and squeeze in a filling until the top looks like it's going to explode. What I like to do is use an apple corer. I plunge it in the cupcake, twist, and pop out a cake cork! Hee hee! And don't be afraid to plunge it right in there deeply and twist! Then I squeeze in some filling and take the top part of the section I removed and use it as a plug. I like having a plug when the filling is different from the frosting. When it's not, I don't bother with the plug. It sounds time consuming, but you can do it all in a few minutes really. It gives an extra yummy surprise to everyone! icon_smile.gif

Hi There,

Thanks so much for posting the recipe and pictures. I've been searching for a recipe for weeks (you'll probably see my other posts in here asking for recipes!) so I can't wait to try this out. I've tried 3 different recipes in the past 2 days!!

How were the cakes to eat? Moist?

Hey, the apple corer sounds like a good idea.... Too bad mine has the slicer attached to it and it's not removable.

I also love to use an apple corer to make a well for filling cupcakes!

Pampered Chef has a nice one, quick and very easy. Plus you get cake to sample.
