ATiddy fab cake and Bashini, lovely flower.

Catsmun, as far as I know the person who suggested gum trag makes the cakes for her shop and I think she only used a tsp to 1 kg of SP, so guess it isn't much certainly not enough to day hard.

AYes looking at Gray and Tiddy doesn't look too hard (she says!!). It could of been much worse with loads of flowers etc that I've not even attempted yet!

AMorning! Early start today trying to get the peony sorted.... I think I'm jinxed with this cake though, the wire started wiggling in the flower so I couldn't rely on that to hold the weight - grr! I firmed it up as much as I could, then stuck it on with a ball of flower paste (with the wire through into the dummy) as a seat then used candy melts all over the back so the weight is distributed over the whole flower and not just the wire. Looks lovely but god knows if it will travel to the fair or not! Just going to take some proper photos, at least if it falls apart I've still got those lol!

I loove the Lego cakes, really fun! I'd love to have someone order something like that!

ABeautiful Mel. Got the peony cutters, just havn't attempted it yet.

Thanks Nanny! I've not long had the peony cutters (FMM set bought at CI) but they are really lovely, theres just soooo many petals LOL! 

 

Yes its Cake Lace, the Serenity mat. The cake was meant to be 3 tier with the middle lace pattern on it as well, but with all my disasters yesterday its ended up just a 2, so I only used the edge/border part of the lace. Its so pretty though, I think this is going to get used a lot!

Mel that is so beautiful I would love to be able to make a peony like that. I love everything about it :smile:

I would also like to know where you got the cake lace from.

 

Jo I love the lego wedding cake it will be great, I love when people do something a bit different for their wedding.

Mel, lovely cake! I love the colours and that lace is just gorgeous! Good luck with the trip. I'd forgotten what the cake was for- is it a bridal fair?

 

Roxy, You just glue your plate of choice on top of the candlestick.

 

My daughter takes after my hubby in cake taste. She polished off her slice of tesco cake from a birthday party yesterday, when she only eats the fondant on my cakes!

A[@]roxylee123[/@] I will also be adding a screw through the plate with the candlestick cavity filled with either epoxy resin or wood filler... I don't like the thought of the glue giving way with a heavy cake on top.

AJust another quick question about this birdcage cake (yes I'm still going on about that sorry)! I plan on using three 6inch round layers followed by a 6 inch dome on top. From having a mess around and a measure yesterday I think this should come around in proportion as each of my layers usually end up around 2-2.5inches each. Do you think I'll need to use boards and dowels in between the layers to keep it supported? I hate it when cakes have so many things that need taking apart before being cut but I don't want it to sink or collapse either. I'll only be a vanilla sponge with chocolate ganache but I'm thinking because of the height it's going to need at least one cake board in the middle, maybe 2?

ASugarluva, I didn't Dowell, the woman in the shop said I didn't need too, the tins I used were only cheap, 2 small 6inch tins from Tkmax, about £3.99 each, used 2 of those jam and creamed them, then the dome on top, sounds like your going higher, so go with your gut feeling then. When you planning to make it?

sugarluva, It's going to be quite tall. I'd say have a cake board under the dome, and have dowels to support that. Cake should be pretty stable without the weight of the dome bearing down on it. The dowels should keep the whole cake supported and stable. I doubt you'd need 2 cake boards.

AThanks nanny and Jean. It needs to be made for Friday so I'm going to bake either today/tomorrow, ganache on Wednesday and decorate on Thursday. I don't usually do them this far ahead but I'm so busy all week I'll have to spread it out. Do you think that will be ok?

I think I'll add one cake board just to be sure. I'd worry otherwise. I was just concerned that you would end up seeing a rim where the board is in the middle but I suppose of I get my ganache right that should be an issue.

You can freeze the cake, thaw the night before you ganache to keep the cake as fresh as possible. 

 

How about cutting down the cake board you plan to put in the middle so it doesn't stick out the sides?

AThanks. I've just done a bit of googling and someone said you should use a card board 1inch smaller than your cakes when you're stacking a double barrel cake. I think I'll just make sure I have one of each size in and go with what I feel when i stack.

I've never frozen a cake before. If I go ache on Wednesday would I need to take them out on Tuesday? And if I bake today would there be much point in putting them in the freezer for one night. I really don't want dry cake though I wish I had time to bake later in the week.

Sugarluva, I'd forgotten it's monday today. I keep thinking it's sunday :duh:. You'll be ok to refrigerate the cake if you bake today and ganache wednesday :)

I do lots of freezing due to my commitments and freezing allows for mistakes to be rectified without the heart attack feeling.  Have never had a dry cake - as long as the cake recipe is a good moist one then it was stay that way.

 

When doing tall cakes you need to separate with card cards otherwise you'll have a long piece of cake and makes it difficult to cut.  In essence its two cakes on top of each other and the person can take one layers off. Yes, it needs to be smaller I only just learnt that recently!!! I ended up with a card lump in the middle.

Has anyone got opinions on courses and their extremely high prices?  I am shocked beyond to belief when I see £500 for 10 - 5.  This is a very price for any training and wonder if there is an ounce of greed on part of the professional. What even strikes me as unbelievable is that some start at 10.30 and ended 3ish and it states excludes lunch!!! When have you ever been on a training course and not served lunch to your dietary needs? Taking out a half hour break would mean you would only be getting 5hrs tuition. 

 

I was lucky back last year when I attended Squires in Farnham for a chocolate course - luckily I had a relative I could stay with up the road but if I couldn't have then it would of been out of my league.  I think I paid £500 ish for 3 days which is acceptable the place is amazing.

 

I desperately need to think about attending a few more courses but these need to be local. Do you have any feedback on courses you attended - highs and lows?

 

There is a baking shop that does courses not far from me and I did one and it wasnt at all good - the person holding it was ok but not a true perfectionist and I didnt come away with much knowledge.

 

I think Wedding Acrylics in Cardiff have a good reputation.

I didn't know Wedding Acrylics in Cardiff did courses? In taffswells you mean?
