I would first go and sit on the naughty step! :D   Definitely attach it to a board - I have a clear glass worktop saver - never done ganache (still a virgin) yet though - but you can use a little royal icing and stick it down and then you can hold it up and see where the icing is.  Freezing it is a good idea - never thought of that.  I have done this for tiny sugarpaste cakes before.  I usually just slide a palette knife under it.

And you are right about icing - weather does have a big impact.  I also never sieve.....on my new Kenwood, there is a plastic guard so no icing cloud any more and no more masks!  Yayy!

AEvening all, I just had loads to catch up on!

Mel, glad your decorating's finished, sooo sorry for you being poorly. It's bad enough being ill but such a shame we can't be ill at a time convenient to us isn't it? I know no time is really convenient but I mean not when your kids are off school or ill, or when you're decorating or you've got two big, fat headachey cakes in one week!

Gray I love your website, fantastic cakes! I think your silver, gold, platinum pricing is really good too, it's good to have an idea of how much things cost isn't it, I usually think if there's no price, I can't afford it.

Jean, I meant to say I didn't see any ads on yours, I was on my phone so maybe that's why, maybe they were there but I didn't notice them, in which case they didn't bother me.

Siany, is it safe to say you're a bit partial ti fudge?!

AHi Maisie, well I did like it , but everyone right, the added petals just made it flop over to much, when I made the other two I supported them with some cotton wool balls.

How are your cakes coming on? And are you better now?

AYes I'm feeling much better thankyou. :-) cough's hanging in but that's always the way isn't it. My cakes are not coming along at all actually! My mudcake split almost in half and I don't know if I can use it, my little girl's had a relapse and her cold's come back worse than ever (that's normal for her tho.) and I haven't even started anything for either cake- except tge broken mud cake which doesn't count if I can't use it. You wish you hadn't asked now don't you?!

AAwww Maisie, I dont know how a mud cake is supposed to be, never made one before, why did you make it? Was it because you were asked? Or just wanted to? What gone wrong with it then?

AIts only a small one and he wants it to go on top of a track similar to the cake I made a few weeks ago, in the countryside with tyre tracks, trees etc etc, I do wonder why on earth end up doing these cakes.

ASad as it is it's quite normal for her nanny, her immune system's not great, that's life for us. I'm making mudcake cos my sister loves chocolate and it's the best chocolate cake I've ever tasted. (Siany, I will try Lindys choc fudge cake, I promise!) bashini said best not to use it if it's going to support another tier (it is) but it hasn't split completely in two, I was hoping I could stick it back together. I don't know what to do, maybe use it and have one tier instead of two. I don't want to waste it and they take ages to bake and I've got so much else to do. I really wanted to practise a tiered cake, I haven't done many and it's only for my sister (meaning she won't mind if I go a bit wrong, not " tough it's only my sister!). I'm going to sleep on it and magically wake up tomorrow with a solution! Either that or ask the Aussies, they're mudcake experts!

Siany, never heard of number 8 rock? And my little girl would be your best friend for life if you had a bag of fudge, she loves it, it's her favourite from the pik n mix!

I'm off to bed now, the magic might take a while! Night all .:-)

Maisie, I've seen on other threads that it shouldn't matter what state the tier is in, as the next tier should be completely supported by the dowels and cake board anyway.  If you think about the old style cakes where there were big gaps with only pillars for show between - all the weight is going straight through the cake down the dowels.

 

I'd say go for it with sticking the cake back together, as long as it is structurally sound enough to take the decorating, and making sure that no weight is put directly on it.

AChapter Three: well it is 1.20 a.m. and I think I'm as done as can be[IMG ALT=""]http://cakecentral.com/content/type/61/id/3225628/width/350/height/700[/IMG] This is the top tier which I am very happy with. Can't show anything else until it is constructed on site but all flower sprays are ready for the next challenge of "adhering them to the cake". Wish there were more tutorials/ blogs on this as " insert into a flower pic" doesn't tell you how to deal with a heavy spray draping over the side of a sponge cake.:? Cakes all on their drums, beaded vases washed and boxes ready thanks to DH. I even made some sprays for the cake table if needed....bonus! All items on my "to do list" up to tonight scored out. Next gather thoughts on what we need to take tomorrow as contingency --many delicate flowers so have to expect even more breakages. Nervous about tomorrow but even though I am on my knees I have a real sense of achievement so far........if it all collapses tomorrow I might have to eat my words.:-D

Couldn't believe how chatty you lot had been today. Sorry not to have had any input but hope to be back focused after tomorrow.

Well done on website, loads of excellent suggestions forthcoming from our lovely crowd. Better health to those who have been or still are feeling poorly. Another excellent question on how we deal with crises when we have cakes booked. Is it worth looking at a network for emergencies? Until Tomorrow or rather later today....goodnight.

ACatsmum, that is gorgeous!! Beautiful!!

Roxylee, thank you, its a patchwork cutter, but only of an ordinary bike, so to make it look more like a track bike I put the mud guards on it, the icing is rolled very thin using petal paste, then dried , then painted, the picture is actually the guy whose birthday it was.

Wow Catsmum that top tier looks lovely, loads and loads of luck for today, I'm sure it will all go brilliantly! Can't wait to see the final finished cake! :)

Nanny your rose cake is really pretty. I love the gentle pink colouring. Is the border an fmm cutter? I have some of those but not used them yet. I'm sure your upcoming cakes will go brilliantly too! I'm sure I saw something from Paul Bradford on twitter recently about a trainer tutorial, not sure if it's a free one or not but I'm sure there are some out there if you're worried :)

Hope you are ok Maisie and your daughter is as well. I would be tempted to still use the mud cake, if the crack isn't complete and the cake can still be levelled properly, then Lizzie is right and the support should take the top cakes weight? But only you can judge if it will hold or not, is it likely to slide out sideways?

Any nanny we all know you'll be great at those cakes too looking forward to seeing them as well.

I'm sure your cake will be fine if it's fully supported with dowels maisie. I have used a split sponge cake for the bottom tier before. And like you said it's only for your sister so if a disaster happens at least this is the best time to test the limits. Though I'm sure you don't want to hand your sister a pile of mush either...

AYes Mel, thats the very cutter, a few of them in a pack, its the first time I've used it, think it adds something more than just ribbon.
