So I am up early due to stupid cat crying at the front door to be let in even though he has a cat flap ! Have got a pen and paper trying to catch up with you all so here goes....
Maisie think I didn't reply last to you, lots of the cakes ive got lined up are still friends cakes so won't be charging much but it's still worrying me as soon I think as more and more people asking me I will have to have made up my mind to continue properly or stop.

I have a shark cake to make now for next Wednesday ! I'm hoping to use Petitecat's choc cake for it ? Haven't seen you on here for a while petitecat hope your ok and just busily enjoying the summer hols. Cake needs to be suitable for carving a sharks open jaw - eek !!!
AI also think I know what my previous problems were with my cakes. I think I over beat the butter the sugar on too fast setting in my mixer and it got too hot meaning it broke down and created a dense greasy cake. I read an article on using stand mixers saying that if you beat on anything faster than medium speed it heats the fat up too much due to the heat from the fast speed. Does this make sense guys or am I clutching at straws ?!!

I have both of our surnames hyphenated, whereas he just kept his. That way we have a name in common, but not literally the same name. Made sense for me to hyphenate as I was already double-barrelled. So just dropped one of my names and picked up his... ;)

Jo, I daresay anything is possible, but I mix my bust and sugar for ages and the only times the cakes have been dense have been when I've added the flour into the mixer. I start my creaming before I've even got the rest of the ingredients out or lined the tins, and by the time I get back to it it's almost white and has increased in volume substantially. I don't ever have it on high though, only medium. I also leave it going for a while when the eggs are in.

Really sorry I've not even popped in every now and then just to say hello. I haven't had the time and the energy. We shifted a total of 70 tons (I correct myself, Maisie, it's not 60 after all) of soil to level our back garden which has a flooding problem. Even when we hired a mini dumper for a week (this effing garden is costing a bomb), we still had to shovel all the soil onto the dumper. If all the work and effort doesn't solve the problem, I think I'll cry.
We had 3 x 20 tons of soil delivered, then another 10 tons. This is what 20 tons looks like:
The only cake business I've been doing is giving some samples to two local cafes. One of them ordered mini victoria and chocolate fudge cakes which I delivered yesterday. It's not big money, I'm just seeing how it goes, try to keep them happy and see if they can promote me in any way. It's kind of a local bakery that promotes local produce and businesses. They say they don't have the space to show my dummy cakes, but maybe they can be persuaded in future.
Just got to say, mini cakes look lovely, but they are fiddly to package and think twice before purchasing the Silverwood mini cake tins, which I found out have no bottoms!!! Not great when your batter is super runny like my chocolate cake batter. Grrrrr
I'm not going to be able to read every page since the start of summer, but I will have a look at the photos.

Yes, I totally agree with this, when I was making my SMBC this weekend it wouldn't cool down and I worked out it's cos the whisk had got hot as it was whisking on high speed for so long it had started to conduct heat from the motor to the meringue! The smaller batch I made went better as I was aware of the issue and it solved it!

AThanks Siany! Yeah I'm completely snowed under these days! Got a shoe on one if the cakes this week and did it first so it hopefully don't crash and fall on the cake.
Made the base double thick so hopefully it won't snap like last time when it was thinner!
