Ooh dear I know what you mean, this weather is not helping anything set properly, and fruit on top is always worrying for me! Could you fridge the ganached cakes to help them along? My next cake has an acrylic tube separator, and it's the first one I've done properly rather than practising, so I'm already getting anxious about it LOL!

AI have kept the cakes and ganache in my cake room which is a bit cooler than other rooms in the house. I don't have a big fridge Mel, but I will try and get them in at least one at a time. I am thinking of stacking them at the venue.

Just finished the ac/dc cake, not good with the black SP! But glad its done and so happy its cooler now, oh my its been so hot today :(

Lizzy, did you leave a business card with your cake? Wasn't sure whether I should, and in the end I forgot anyway!

I don't for the school ones petite, as all the parents in my son's class know me and the school has my number :-) It's only a diddy school though and I know it would just be the class and the staff who would see them so not worth it for me.

AMorning guys! :princess: (totally going with this princess thing lol!)

So I'm off to work soon and I'm going to have my h2b to pull out my frozen layers at 2pm for them to defrost. Is it too ambitious to thaw, torte, fill and decorate this cake for delivery tomorrow morning?

Because it's frozen should it settle longer or something?

Well the dreaded happened last night guys :( Got my first neuro attack of this year :cry: I did suspect it was imminent tbh but this really is the worst thing that could happen for me right now...a complete game changer. Spent most of the night hoofing on my oxygen as was too late to do a injection. I may not be on here much now unless it was a one off which i doubt (be the first time in 15 years if it is!)

 

haven't had much sleep but will try and get my picture on at the very least just because i was so happy with it :smile:

Kuuushi, did you bake them on Monday? I think it's better to take them out before you go to work. If you take it out at 2pm, not sure there's enough time to thaw, but.... In this heat it may thaw quickly.

My dark choc ganache hasn't firmed up at all.. Why do I have a bad feeling about this cake!!!!!

ANanny, as you know, I use your ratios for milk chocolate ganache (2:1). Is this the same for white chocolate or do I need to change it?

AMarvel I used 3:1 for white chocolate works perfectly. I dod 1kg white chocolate to 330ml double cream

AOoooo marvel only ever made it once, and I think I used 100ml of cream to 600gems of choc, but maybe one of our more experienced ganachers would be able to help more than me.

It was fine tho with those quantities.

ADon't know if anyone knows this but I work for a huge pharmaceutical/medical operation pack company and work with a lot of surgeons and doctors.

If what tidds has is what I think it may be "cluster headaches", I really REALLY feel for her. Affects about 0.2% population and can be excruciating and immobilising. Might be going off on a tangent here but still get well soon tidds. Sending hugs your way xxx

The my last cake, she loved it but the SP was awful, not my best I'm afraid to say, thankfully the brush embroidery covered up lots.

Thanks both. It's only to go on a dummy so I can use my stargazers and then photograph it, so I can then bin them. Will have a play today...

AOh dear Bashini :/ Is it too late to scrape off and redo the ganache? If not I'd be tempted to put each cake in the fridge if you can? I don't have a big fridge either so can only put one in at a time too, but I do find it helps a bit with firming? Good luck x

Marvel I've not used ganache loads, but for white I do 3:1 using Sainsburys basics white choc & their whipping cream. Sounds odd using basics, but it actually has more cocoa butter in than their normal version! Happy holidays :)

Yes Kuuushi i am a Ch sufferer. I dont try to explain it because quite simply it cannot be put into words. I have tried on many occasions and as soon as I get "oh I suffer with migraines" or something similar I either punch em or just walk away! I carry a card with me just in case an attack happens while out which isnt likely as I wont leave the house. I have been in remission for about 14 months now. Generally its twice a year with the longest remission being 2 years. Attacks hit at 2am on the dot and will last anywhere from 20 mins to 4 hours and the cluster cycle will last 3-6 months on a daily basis. I understand that people are ignorant to it but thats mainly because its a rare not often talked about condition. It took me over ten years to get any help.

 

To save me even trying to explain, watch this if you like (strangely the girl looks just like me!)


 

and if your feeling brave type cluster attack or suicide headache into youtube. I think the Andrea one just about captures it! Then imagine that for 4 hours.

 

Im feeling okish at the moment but once that first attack hits I then live in constant fear. It is about that time of year for me but I think the heat may have triggered me :( I will try and get on but guys this really does end my life while its going on so i may just appear in a  few months :(

AMarvel, for dark choc it's 1:2 ratio cream to milk and for other two 1:3 ratio. :-)

Kuuushi, I don't think would. But if you are worried about it, ask you H2B to take around 12pm?

Barbara, I know. After what happened to Suzanne, I am a bit worried now. I know it's the dowels which gave the problems. But still it makes me nervous. The bottom tier is 12" chocolate and baked it in two halves. Normally I half them and put the filling. But last night I just put only one filling. I am scared that if too much filling the layers might move as the ganache not firming...

The white choc seems to be fine. It's the dark choc I am having trouble with. I put the ganache in the fridge now. I will ganache the white vanilla first. Then do the chocolate. :)

I have injections, but can only use 2 in 24 hours and two lovely oxygen tanks!

 

If this is a one off (touches wood, cat any anything else) I will be fine for the course but if its a cycle Kuuushi I absolutely wont leave the house, even with my little OUCH card :(

Rest up and don't push yourself. I get painful headaches around my eye socket at times and lifting my head and light kills me but I can't imagine what your going through! Dark room, cool flannel and some rest!

Don't stress about caking!
