I have an order for the infamous bleeding armadillo cake for next Friday.I was wondering what should I make the ears out of? The cake has to be transported to Boston Mass which is about 2 hours travel time.I need to make sure that they are strong and well supported maybe a dowel in the base of the ears? i'd appreciate anyone thats made one of these give me some pointers please. Thanks

I'd make them out of gumpaste.

i have made two fish cakes and used the following technique for the fins (see my pictures) - cut two identical pieces from fondant (gumpaste would work too) and sandwiched them around 2 toothpicks, wet the layers so they stick to each other. let dry in desired shape. they are stiff when they dry and you can poke them into the cake with the tootpicks. it has worked well. next time i might explore leaving the fondant thicker and poking the toothpick in rather than sandwiching it, but since i haven't actually tried it i can't say how well it will work.
this ought to work exactly the same for the ears.
