Question about cupcake papers

I have 2 questions that I need some help with:

1. Why do my cupcake papers stick to the cupcake and tear it apart when you pull it off?


2. Do you decorate and serve your cupcakes in the paper you baked in? Or, do you remove and replace, or what???

I have found that if I don't let my cupcake pan cool completely, that my papers stick to the cupcake and I end up with more on the papers than in my mouth. . .ALWAYS a bummer! So toss it in the fridge until it's cool between batches. It could also be something in the recipe, too. I think alot of brown sugar may cause more sticking. . .that's just a suspicion that I have.

Yes, keep the papers on that they were baked in. If you want them to look fancier, check out the laser cut paper wraps that are on Global Sugar Arts and other supplier sites. Just google "decorative cupcake papers".

sometimes i spray the inside of the cupcake liners with a little pam, that helps them release from the paper

I spray the liners with a little Pam as well. My cupckaes never stick now. I am glad I am not the only one. My hubby thought I was crazy!

Depending on my recipe, I have trouble with the cake shrinking back away from the wrappers when they are cooling leaving the cake exposed to dry out.



What to do with that situation???

BeesKnees578-I havent had this happen, but when I took one of the wilton cake decorating classes, the instructor told us that if you overmix your batter, it will cause it to shrink and pull away from the pan...not sure if thats whats happening with your cupcakes. I always set my timer and mix for the exact time the recipe states.

I am pretty sure that I am not overmixing, since I am always worried about that drying a cake out or making the texture bad (from what I have heard), but I will be extra consciencious about it next time. Never can be too sure. . .
