Has anyone ever made a cupcake cake? I have seen them in the bakeries at Wal-Mart and the like. If anyone has tried their hand at this I would love any tips and pics you could send my way. I want to do something quick and simple for my preschool. We are having a baby shower on Friday, Feb. 27th, for our lead teacher.

Cupcake cakes are insanely easy. Basically you "glue" the cupcakes (still in the liners) onto the cake board with a dot of icing. Once you have all the cupcakes in place, use a large tip or open coupler to pipe icing in long stripes completely covering the cupcakes. Then smooth the icing with a spatula. Then decorate as you would a regular cake. Remember, only the tops get iced, not the sides!
