When do you guys start making your cakes on order? Do you freeze?

For a regular cake (birthday, etc), I start 2 days before. Bake the cake, cool overnight, and then decorate the next day.

Me too - I bake the cake and tint the icing one day and decorate the next. Unless you're using fondant, you'll need to possible do that as much as a week ahead of time.
