There are so many of you on here way more experienced than I...so which pans do you recommend? I have been looking into the Fat Daddios and Magic Line, or Calphalon...are there any preferences? If so, why? The few pans I have are Wilton and while they are ok but I am in the market to replace and get more shapes as well...all of your advice is greatly appreciated!
I have one set of Fat Daddio's and love them. Want to try some Magic Lines too when I can get my hands on them. I doubt you could go wrong with either brand.
I have an unhealthy love relationship with my Magic Line pans. Shhh. Don't tell my husband.
Magic Line is the best for those sharper edges, so most of my squares & sheets are those.
Now, PLEASE don't kick me, but I have no problem with my Wilton heart, petal, round, hexagonal, & oval sets, as well as some of the shaped pans - ie. Stand-up Bear & 4 of the small ones; Wonder Mold & the small ones; Sports Ball, Stand-up & other Christmas Trees, Stand-up House, large and small Book pans, large and small Crosses, every size you could imagine of loaf & cupcake pans, 2 large (1 heart & 1 regular) & 4 small Tasty-Fill pans, and so many others.
I also have both of the Burvelle Educated Cake Pan Sets, several Doughmaker pans, & even some pans that I got through a restaurant which have no names on them at all, but they'd rival any other cake pan I've ever had the pleasure of dealing with. It would take a couple of days to inventory all of my pans (and that's just the pans ).
I guess what I'm trying to say is get the ones you want and will use.
Do you have your own shop/store? If so, then you probably need to get the "rough & ready" Magic Lines.
If you're doing cakes/cuppies/cookies for family and friends, and maybe even a neighbor; you pick out what you want to use. Buy one pan and try it. If you like it, and it does what you want it to do; buy more of those.
It doesn't have to cost an arm & a leg, but if you can afford it and you have the room to store them all, get the best you can no matter what the name or price is.
But ultimately, you're going to have to be the judge. I've heard so many people say that they absolutely love the Fat Daddio's, and just about as many who didn't. It's the same with all of the pans.
Wow! I really got off on a tangent there, didn't I?
I like my Magic Line and Wilton Performance pans (those are discontinued, so I get them on Ebay) best.
I recently found some "professional pans" that are quite reasonable--free shipping when you spend $200, but very reasonable if you spend less. The pans look very much like Magic Line:
