I hope I explain this in a way it makes sense. I can't get my gumpaste to roll into a smooth ball. It always has these pieces that won't completely join, so it looks like pie dough. I've tried warming it, adding Crisco, rolling it with my hands, but it just won't go smooth. It's really making my figures and shapes look messy because I can't get it smooth. Any ideas?
Thanks for the video link. I tried it using her rolling technique in the video. Still having some problems though. I wonder if it is the consistency of my GP. Actually, it's 50/50 GP and Fondant mixture. I wonder if the mixture consistency is what is giving me problems. I am going to try just straight GP today and see if that is the problem. When I have this problem, I try working in a little egg white. make sure that if there are any really hard crumbs, that you pick those out.
I have found that when I want really smooth flat GP, I don't do the 50/50 thing. Knead knead knead, and add crisco. Smooth and flat and no crumbly edges ever.
Nicholas Lodge's gumpaste is wonderful to work with, but you really have to experiment when you're making it. The first time I made it I used all the sugar the recipe called for and had a similar experience to what you're describing. I actually had to add water to it to make it the right texture. No amount of Crisco was softening it up. The next few times I made it I reduced the amount of sugar when making it and it's perfect. I've made it with only 1/2 a bag of confectioner's sugar and it's come out perfect. Nice and smooth and easily rolled out, no lumpy texture. So, try a lot less sugar the next time you make it. As for this batch, honestly, I'd dump it. It was way too much work to make the "bad" batch I made pliable and it was easier to just make a new one. Good luck!
I love Nicholas Lodge's recipe for making flowers and things that are rolled out. But for modeling figures and objects I have the same problem you do. I can knead and roll forever and never get the gum paste into a smooth ball.
So I use a different recipe when modeling. It dries a little slower and seems to stretch a little more. If you want the recipe I can PM it to you.
