That recipe that Melvira posted with Almond flour in it sounds like it would be great. But, almond flour isn't like real flour; it's more like cornmeal and gives a gritty crunchy kind of mouth-feel. It doesn't taste bad, it's actually quite bland, just wanted you to know.
And I know this because I made my own almond flour last night and made low carb pancakes that were excellent! (once they had sf sugar on them.....plain they were just plain!)

Yah,. almond flour is just ground almonds, but you can sub reg. flour for it if you don't care about the card effect.

Thanks for the info on the sweetner Callyssa! I am always looking for options. I can't have a lot of sugar, so I simply don't eat it. It would be nice to be able to have the things I love! thumbs_up.gif

You can use Stevia to replace the sugar. I used to get it in a health food store but now it is sold in the grocery stores too. God bless your MIL. That's a hard road she has traveled.

Good grief lady! You want my blood pressure and cholesterol readings too? Hehehehe. Just kidding! Nothing that big, I'm just a type 2 diabetic, SORT of. It's weird, it's only food control, I've never had to take meds for it, but if I keep my weight down as well as my consumption of sweets I'm A-ok. When I took of a lot of weight, it pretty much went away for all practical purposes. Of course, after having babies, I'm fattened up again now, so I need to get the weight off and then I'll be better.

Ok, thank you. Now I need your blood type and your dr's name and address icon_biggrin.gif I'm type 1 diabetic and I wish I could control it with my diet icon_sad.gif I have the pump, which works out pretty good. My cousin, who is only 26, is type 2 diabetic and was just admitted to the hospital and they said it doesn't look good. She took her meds when she felt like it and she could out drink a sailor. They didn't give her much time. Her son (8 yrs old) is diabetic too and I feel so bad for him, but I hope he sees how important it is to take care of yourself.

Ok halfpint... you asked for it... the stool sample is in the mail. Hehehe. I'm sorry to hear about your cousin. There is nothing worse than someone who refuses to take care of themselves, especially if they have children. My heart breaks for the child that could end up motherless. I have a cousin who is type 1... actually I have 2 cousins who both do this... they both refuse to take care of themselves or stay on medication or watch what they eat, etc. Once cousin was rushed to the hospital and his blood sugar was over a thousand! I didn't even know that was possible. I get nervous if mine gets close to 200.

It's funny you say that, I just had to do that for my son....so gross. It's bad enough cleaning it, but scooping it up and putting it in a jar is a whole nother storyImage

She actually has 3 kids, and I wish she would've straightened up. We're praying for a miracle. We just found out my Gramma has breast cancer, but they think they caught it pretty early , so that's good. I feel sorry for my aunt, she lost her brother (my dad) her mom has breast cancer and her daughter is in the hospital dying. All within 9 months.

Hey Mel, it's worth trying to find that Erythritol. If you can't find it in a store you can get it online at Netrition.com. It may have been someone here who directed me there, if so credit goes to them! (I'm on a doggy forum too and I can't remember what I read where!).
FYI.....I normally can NOT lose a pound on low carb dieting and this time, the only difference being I'm using this sweetener and actually adding lots more fats, and I've lost 8 lbs. in three weeks. I know, no great feat, but for me it's better than nothing, and I don't have a lot to lose anyway. I think you'll be pleasantly surprised. I have some really good recipes I've tried this time that are definitely helping keep me on track, let me know if you want me to share them.

Callyssa, 8 pounds in three weeks is fabu!! They say you're lucky if you can lose a pound a week without major painful working out, etc. So you're doing great! Yes, by all means share your recipes with me!! You can send them to me at echo@netins.net I'd love to hear what you like and don't like. I'm ready to get back to my fighting weight! As in, having to fight off the advances of men in the grocery store. I adore that! My DH isn't as thrilled, but he knows I'd never even consider... we don't even have to discuss it. (Unless Johnny Depp shows up at the local Super WalMart... then all bets are off. icon_redface.gif )
