I have been asked to make a Pina Colada or coconut cake for a 40th birthday party. I've never made this flavour before and was wondering if anyone could suggest a recipe (doctored box mix preferred if possible). I found a few on here, but I would really like to use one that has been tried and loved I am doing a stacked cake, so it needs to be durable too! Thanks everyone!
I searched for these recipes in the recipe section, but I couldn't find them...I think I might have gotten them on a forum discussion:
Coconut Cake
1 box coconut cake mix (use white if you can't find coconut)
4 egg whites
oil as called for on box
replace water called for on box with coconut milk
1 box coconut pudding
2 teaspoons coconut extract
Pineapple Curd
2 large egg yolks
3/4 cup pineapple juice
1/4 cup sugar
5 teaspoons cornstarch
Whisk all ingredients in a small sauce pan. Cook over medium-low heat, whisking constantly until thick and it begins to bubble. (3-5 minutes) These are the instructions on CC, but I think I actually used a double boiler for the pineapple curd...it cooks the eggs more slowly so they don't curdle. Let cool completely before using.
I know it's not technically a pina colada cake, but it is pineapple and coconut and it is VERY delicious. It's my favorite cake. It's what I made for MY birthday! The cake is pretty sturdy as well.
I used the coconut cake mix by duncan hines and simply threw in about a cup of shredded coconut and about 2 T of coconut extract and used the filling recipe below.

I used it for a wedding and it received rave reviews!
Pineapple-Coconut Filling: 3 cups
o 1 ½ cup crushed pineapple and remaining juice
o ¾ cup sugar
o 1/3 cup beaten egg yolk
o Dash salt
o 1 T cornstarch
o ½ T Gelatin
o 2 T cold water
o 1 cup coconut, toasted
o Sprinkle gelatin over cold water
o Bring remaining ingredients to low boil, boil gently for 2 minutes, then cool slightly
o Blend in gelatin and coconut.
