Strawberry Cream Filling

I have a customer who wants pink filling in her wedding cake, to match her wedding colors. I suggested a strawberry cream filling, and she loved the idea. So I mixed a bit of my buttercream with the strawberry filling that I normally use, which is the pre-made kind sold in the sleeve, but she thought it was too sweet. I found a recipe for a Strawberry filling that is mixed with heavy whipping cream, but it also calles for you to make your own strawberry mixture. Has anyone done this by just adding whipped cream to the already made stuff? My only concern is that it is too thick to mix with the whipping cream. The recipe says "heavy syrup", but the premade stuff can be kind of goopy.

I can get the pre-made stuff for a lot less than actually buying strawberries, and I already quoted this bride a price. Any suggestions would be greatly appreciated. Here is the recipe if anyone is interested:

2 C hulled Strawberries, crushed
1/2 C sugar
1 Tbsp unflavored gelatin
2 Tbsp cold wayer
3 Tbsp boiling water
1/2 C whipping cream

Add sugar to strawberries and set aside. Softed gelatin in cold water then add boiling water and stir until gelatin is dissolved. Stir gelatin mixture into strawberries and allow to cool.
Whip cream until stiff. Fold whipped cream into strawberries when the strawberry mixture is the consistency of heavy syrup. refridgerate until set.

I use frozen strawberries - put them in a pot with a little bit of water and some sugar and let them cook away. Then I've added it to my BC and it was really good. I don't really have a recipe, you can just do it by taste.

Thanks! I haven't thought of that, frozen strawberries would probably be less expensive than fresh ones, I will try it! Thanks again! icon_biggrin.gif

you are very welcome and yes frozen is MUCH cheaper than fresh - plus its one of those things that you can keep "on hand" and it works with any frozen fruit.

makes a realy good syrup to put on pancakes or waffles too! yum!!

I just add some strawberry jam and or preserves to my vanilla buttercream. Everyone seems to love it.

Using whipped cream scares me..... I never know if it has to be kept chilled or not.....

I did this filling last time and my family loved it.
Frozen strawberries...I added some sugar and let them sit for a while. Then I whipped 8oz of cream cheese and set aside. I whipped heavy cream (about 12oz) with some powder sugar (no too much) then I added the whipped cream cheese, mixed well and set aside.
When I filled my cake I made the dam around it (to avoid the filling overflow) and then I put the cream cheese mixture first and then the strawberries on top.
I'll tell you everyone loved it and it doesn't come out too sweet, it's just perfect!!

I add strawberry preserves to buttercream too. I also add chopped bits of strawberries. Very tasty...and pink. icon_biggrin.gif

I did a search for strawberry filling and found this thread. I just decided that I want to do almond crm chs pound cake for DS's bday cake this weekend and thought it would be good w/ a sb filling & crm cheese frosting. Was afraid I'd have to run to the city to get a sleeve of filling but as always, CC comes through!

I will either be adding strawberry preserves or MIL's strawberry sundae topping to cream cheese buttercrm for the filling.

Adding strawberry preserves to a whipped cream bc sounds heavenly but I don't want to make 2 dif icings. Will let you all know how things turn out. Thanks for the help!
