So I finally baked the Coconut Cake in cupcake form ....
They turned out so delicious! And the texture is so soft and moist, I absolutely love them. The toasted flakes really did the trick. I'm going to decorate them tomorrow so looking forward to trying them with filling and toppping! yum
I should mention that I didn't have any coconut flavoured pudding mix so I didn't add any. I also added an extra tablespoon of vegetable oil because I heard the coconut flakes can dry out the cake.
I toasted the coconut flakes in my toaster oven, set on 325 deg for about 3-4 mins ... I kept checking on them because I didn't want them burning!
Well crap, I guess it wasn't in the stars for me to make the coconut cupcakes. First I toasted the coconut in the toaster oven -- can you say "flaming coconut"? Then I decide to use the rest of the bag, I get that all set up and start on my liquid ingredients. Who knew coconut cream and coconut milk could go bad INSIDE the can??? Ah well... I guess it's time for strawberry cupcakes. Which works out well, I have pink icing made for roses next week in class.
