I've honestly loved, loved, loved every single one I've tried. So far, I've done:

Snickerdoodle (with a snickerdoodle cookie between the cake layers)

The cinnamon roll is the favorite around here.

My 30th birthday is in a month and I'm going to be making my own "fancy" cake (only way I'll get one, haha). And I think I'm going to do some sort of peanut butter cup type cake flavor. Mmmmmm. icon_smile.gif

I still haven't tried a ton of these but my favorite to date is the Mimosa cake. It was a huge hit when my friend got married. I have a friend who really doesn't like sweets and she loved it. I need more reasons to make cakesicon_smile.gif

I was looking for a just Coconut Cake in the documents but Coconut is always mixed up with something else. So I'm writing up a recipe for just coconut which I plan to make tomorrow, please let me know if it sounds do-able ... thanks!

- 1 pkg white cake mix
- 1 cup flour
- 1 cup sugar
- 3/4 tsp salt
- 4 egg whites
- 2/3 cup coconut milk
- 2/3 cup coconut cream
- 2 tbsp vegetable oil
- 1 cup sour cream (or coconut flavored yoghourt)
- 1 tsp coconut extract (if I can get a hold of one)
- 1 cup flaked coconut, folded in

Toast the coconut before adding to the cake batter.

It sounds yummy just a heads up the only time I made a coconut cake with shredded coconut it came out a little dry. Hopefully your coconut cream will help that.

Yeah I was thinking about toasting the coconuts but wasn't sure. Was planning to decorate with toasted coconuts though.

I may try these out as cupcakes then. I've never worked with coconut milk or cream haha so it'll be interesting to see how it turns out. I tried to look for coconut pudding but wasn't successful.
