I tried MacsMom Apple Pie Cake two nights ago. It was delicious, but I wasn't quite sure what to fill it with or what kind of frosting to use. I decided to just take the apple pie filling and mix it with a little bit of vanilla-cinnamon swiss meringue buttercream frosting. What frosting do you normally pair it with?

A caramel or cinnamon frosting. I fill it with pie filling layered over white chocolate truffle, or caramel whipped into the WCT.

Frostin Pride is like Bettercreme - non-dairy whipped topping/frosting/filling. It comes frozen in milk carton style containers - thaw and whip. I find mone at Smart&Final and Sam's Club (at Sam's you have to ask the bakery).

I prefer Frostin Pride - it is a little thicker and more vanilla flavor - but it also more expensive.

You will need 3 or 4 packets of single serve instant coffee plus brewed coffee for the liquid to make a chocolate cake taste like coffee. I made it with the chocolate truffle filling, stirring mini-choc chips and another packet of instnat coffee into the truffle filling.

That sounds really good macsmom, but how do you make your truffle filling? Or I guess another way to put this would be that the way I know to make truffles is to like make a ganache type concoction and freeze or refrigerate until firm and scoop to make balls out of and roll into whatever you want. I guess I kind of thougt of that as the filling so am a little confused. So if you don't mind would you please tell us how you do your truffles and how do you fill them? and also what recipe do you use for your filling that you would add the coffee and mini-chips to? I hope this is not more confusing? I am always looking for new things to try and learn new methods so I would really appreciate any help you are willing to give. Thank you in advance. Julie

I am wanting to try the "Scratch Version White Cake ("A Better White Cake" submitted by edencakes, discovered by LorienSkye)" on the gourmet flavors list. I am wondering how long does this cake stay moist? I am a fan of WASC using cake mixes, yet here lately it has been difficult to find th BC box mixes that I use. I like to make my cakes a couple of days ahead of time. So any tips will be helpful.

I finally tried the Ambrosia... LOVE it!!

I modifed it (italics are my changes)...
Ambrosia Royale
2 white cake mixes
2 c flour
2 c sugar
1 1/2 t salt
1 pkg vanilla pudding
1 c chopped pecans *1-1/2 c
1 c flaked coconut *1-1/2 c
1 can pineapple tidbits, drained *1-1/2 c
1 c mandarin oranges, drained and sliced *1-1/2 c
1-1/2 c chopped maraschino cherries
3 T grated orange rind
2 c sour cream
8 egg whites
1-1/3 c coconut coffee creamer
1-1/3 c water

1/4 c oil
1/2 t LoRann Pina Colada, 1 t almond extract, 1 t butter flavoring

I put the fruits in a food processor and set them aside so the juices could settle - I poured out the excess juice before stirring the fruits into the batter post-mixing.

So, has anyone had problems with the reduce Betty Crocker cake mix. The mix has been reduce - it is now 15.25oz. or are just adding more mix. You don't even get 2-8" cakes as posted by others.
