I still haven't tried a ton of these but my favorite to date is the Mimosa cake. It was a huge hit when my friend got married. I have a friend who really doesn't like sweets and she loved it. I need more reasons to make cakesicon_smile.gif

I was looking for a just Coconut Cake in the documents but Coconut is always mixed up with something else. So I'm writing up a recipe for just coconut which I plan to make tomorrow, please let me know if it sounds do-able ... thanks!

- 1 pkg white cake mix
- 1 cup flour
- 1 cup sugar
- 3/4 tsp salt
- 4 egg whites
- 2/3 cup coconut milk
- 2/3 cup coconut cream
- 2 tbsp vegetable oil
- 1 cup sour cream (or coconut flavored yoghourt)
- 1 tsp coconut extract (if I can get a hold of one)
- 1 cup flaked coconut, folded in

It sounds yummy just a heads up the only time I made a coconut cake with shredded coconut it came out a little dry. Hopefully your coconut cream will help that.

Yeah I was thinking about toasting the coconuts but wasn't sure. Was planning to decorate with toasted coconuts though.

I may try these out as cupcakes then. I've never worked with coconut milk or cream haha so it'll be interesting to see how it turns out. I tried to look for coconut pudding but wasn't successful.

Squeeky3, I have a bottle of imitation coconut extract, made by Schilling. I don't recall the store where I found it, but it is out there somewhere. Good luck on your cake. Be sure to let us know how it turns out.

I went to the store last night to look for coconut extract, the label was there but it was empty icon_sad.gif Just my luck! I'll check around, I'm sure I'll find it!

Alrighty ...

So I finally baked the Coconut Cake in cupcake form ....

They turned out so delicious! And the texture is so soft and moist, I absolutely love them. The toasted flakes really did the trick. I'm going to decorate them tomorrow so looking forward to trying them with filling and toppping! yum

I should mention that I didn't have any coconut flavoured pudding mix so I didn't add any. I also added an extra tablespoon of vegetable oil because I heard the coconut flakes can dry out the cake.

I toasted the coconut flakes in my toaster oven, set on 325 deg for about 3-4 mins ... I kept checking on them because I didn't want them burning!

Well crap, I guess it wasn't in the stars for me to make the coconut cupcakes. First I toasted the coconut in the toaster oven -- can you say "flaming coconut"? icon_eek.gificon_confused.gif Then I decide to use the rest of the bag, I get that all set up and start on my liquid ingredients. Who knew coconut cream and coconut milk could go bad INSIDE the can??? icon_confused.gif Ah well... icon_rolleyes.gif I guess it's time for strawberry cupcakes. Which works out well, I have pink icing made for roses next week in class. icon_biggrin.gif
