I am going to Belgium this weekend and I want to buy some chocolate. I don't know what exactly to look for. I just got my Oreo & truffle molds, so I am looking for a chocolate for them. What do I look for? What percentage? If anyone has any suggestions, I would greatly appreciate it.

I use Callebaut, and that is available in white, milk & dark (and pink strawberry, but it can be hard to find), and they are all delicious and nice to work with. I recommend buying it as chocolate chips for greatest versatility.
