I have a client that been talking bout a wonderful flaverful
cake called "The Farmer's Daughter's Cake" and wants me
to make it. Iv looked threw ALL my 2000 cookbooks..looked
online and book stores..cant find the recipe anywhere! icon_sad.gif
Please! Does anyone have a recipe they can share? Any info
about it also would be ever so appreciated!

Sorry it took so long, I was cleaning and hadn't checked the computer icon_lol.gif

This is from the "Maida Heatter Cakes" Book.


It's an 8 in square single layer white cake , light and tender, but with body covered with an old fashioned chocolate icing. Since it is made with whipping cream and no butter, my guess is this recipe was perfected on a dairy farm where they had real heavy cream, but it works with the kind of cream available in the stores today. This is so easy, it's hard to believe.

The Farmers Daughter's Cake recipe

2 cups sifted A/P flour
2 tsp baking powder
1/4 tsp salt
2 eggs
1 tsp vanilla extract
1/4 tsp almond extract
1 cup granulated sugar
1 cup whipping cram

Adjust rack to the middle of the oven and preheat oven to 350°. Butter an 8 x 8 x 2 square cake pan. Dust the pan with fine dry bread crumbs and tap out the excess. Sift together flour, baking powder and salt, set aside. In a mixer bowl beat eggs, add vanilla, almond and sugar. Beat in the cream. On low speed, add the dry ingredients. Beat only until smooth. Pour in the prepared pan. Bake 35-40 minute. It domes slightly, but goes bake to normal when cool. Let cool in the pan for 5 minutes, then cut carefully around the sides to release cake from pan. Let cool 5 more minutes. Cover with a rack, turn pan over releasing cake from the pan. When the cake is cool transfer to a cake plate or cutting board, bottom side up. There is a chance that more icing may run down the sides of the cake than you want, put parchment strips under the cake. Icing can be made up to the beating stage while cake is baking or while it's cooling.

Old fashioned Chocolate icing recipe

4 oz unsweetened chocolate
1/2 cold milk
1 1/3 cup granulated sugar
2 egg yolks
1 tbsp +1 tsp unsalted butter
1 tsp vanilla extract

Place the chocolate, sugar and milk in a small sauce pan over med heat. Stir until chocolate is melted and sugar is dissolved, does not have to boil. Remove from heat and let stand for a minute. In a small bowl gently whisk yolks, just to mix.Very gradually add 1/2 of the chocolate mixture to the yolks. Give a quick stir then add yolks to the rest of the chocolate mixture. Cook over low heat stirring for 1 minute. It will not look smooth, but as long as you didn't add the chocolate to the yolks too quickly, you'll be fine. Put in your mixing bowl and mix in butter and vanilla. You can do it up to this point while the cake is baking or cooling. Beat the icing on high speed for 10-15 minutes. The frosting should be smooth and shiny and slightly paler in color and as thick as heavy syrup. Pour about 1/2 of the icing onto the cake, let sit for a minute. Pour a bit of the icing in the middle an towards the corners, let sit a minute. Now you should pour the remaining icing over the cake. Not much should drip onto the parchment paper. Let cake stand for a few hours to let the icing set. The icing will be dry to the touch, but it will stay deliciously soft. Slowly pull parchment out from under the cake. Cut in to squares and serve.

Ok, I figured it was going to be a good old fashioned type of cake. It sounds really good! Being out here in the country, I can really appreciate this type of food!

yea!! I have everything at home to try this. Even though I have lots left over from Thanksgiving... a white cake sounds like a nice change!!!
