What Fillings Will Go Well With Chocolate Cake??

I have my 1st wedding cake tasting on sunday and the couple loves chocolate. I've tried the cookies n cream filling with the chocolate cake but I don't think it goes well. I need to find out what fillings will go well with chocolate cake.

Also, the wedding cake is going to be covered in red fondant. So my question is, should I cover the chocolatecake in chocolate buttercream and then with the (red) vanilla fondant or regular (vanilla) buttercream with the red (vanilla) fondant. I just don't want the flavors to clash.

Cover in chocolate BC...

What doesn't go well with chocolate!? I use Cookies-n-Cream and everyone seems to love it.

~ Raspberry pastry filling (since it is stable)
~ Chocolate Bettercreme blended with a pkg of chocolate pudding and mini-chocolate chips.
~ Flavor the above with creme de menthe LoRann oil or just about any other flavor (I like orange and chocolate together).

When I do a tasting, Ive made 3 small (cut with a circle cutter) cakes...

I leave one with just the filling, no frosting or anything,
One in buttercream that I use
and one in fondant... white.

it gives the bride a chance to use their imagination too in creating a flavor that fits them.

As for your red cake... good luck I hate red cakes b/c the red acts funny sometimes. Cant wait to see yours. Buy the fondant already red IMO.

With chocolate cake...fillings.... strawberry, raspberry, plain ol buttercream, chocolate butter cream, fudge icing... ganache... chocolate mousse.

And my absolute favorite.... CARAMEL yummmm

How exactly to do you do this:

After you cut the cake int he round circles, how do you fill it with the filling? Just like you would a regular cake or with a tip like in a cupcake?

I'm just still not sure how I want to do the cake tasting. I think it would be so much work to do so many 6 inch cakes for a cake tasting.

I thought about doing the round cutouts liek you were saying and piping a bit of buttercream and put the fillings in small bowls. Then they mix, pick a choose what they like. But I don't how I would do the fondant?

Sorry so many questions. I'm just nervous. I know for a fact I have the order already but I just want it to be perfect.

I cover my choc cakes with vanilla bc then fondant. I agree that if you can buy the fondant already colored red to do so.

As for a filling: choc buttercream, vanilla buttercream, raspberry buttercream, raspberry fruit filling (the sleeve stuff is good!), caramel buttercream, cream cheese (sweetened like you would use on a carrot cake)

Like the above post I allow couples to mix and match flavors to see what they like. Just spoon the fillings onto the plate, they really like trying out the different combinations!

Yeah, I agree with the red fondant. I already bought the precolored red fondant when I did my daughter's strawberry shortcake birthday cake that is in my photos. Red and black I think are the biggest PITA to get just right.

I like to use a turtle filling... Caramel and chopped pecans... big hit every time!

Melan, do you have a recipe for your turtle filling? I've been asked to do a chocolate cake with a turtle filling and have NO clu how to make it.
