When ever I roll out fondant I usually use powder sugar so it does not stick, but there is always alot of it left on the fondant. How do I prevent this from happening?
I roll fondant out on a vinyl or silicone mat with a swipe of crisco--no dust, no fuss. PS makes it sticky and CS makes it dry, so I avoid the powders all together.

You can also clean the cake off with lemon extract or vodka. Some decorators use an airbrush but I don't have one so I use a paintbrush. Since the alcohol content is so high it dries quickly and gives a clean finish.
I use cornstarch, but once I have the fondant on the cake and all smoothed out I buff it with the palm of my hand (I don't generally use fondant smoothers), and that takes care of it! Anything left is usually absorbed while the cake sits in the fridge or when I give it the final pearl airbrush finish.
I also use cornstarch and have no issues with dust at all. It brushes right off and never gives me any issues. Maybe since the powdered sugar is...sugar, it tends to stick more.
Im going to try CS next time too, Will it work the same on chocMMF? I never know how to make the chocMMF look "clean".
Well, I don't use MMF so I can't vouch for how it works on MMF but you could give it a try. I would imagine the result would be similar. I use cornstarch on all colors of fondant. I just did a cake where there were all sorts of colors and details used (including chocolate brown and black) but I never had a problem with dusty fondant! Just a quick brushing off and it is gone.

Although I never use any powders for rolling (no benefits that I can see, and therefore, not worth the mess), I have seen people roll chocolate fondant out on cocao powder.

I roll my fondant on silicone mat and I rub my hands and the mat with a little bit of crisco, but if you like the sugar or the CS just use a pastry brush and that's it.

I am going to try the CS, but Im curious about the crisco. Do you still flip the fondant after each roll? Does it make it sticky? I will use this method when I use chocMMF.
Personally I do not flip it each roll, sometimes I do like 2 o 3 times (when I use crisco) and then flip it, it doesn't make it sticky I use little by little (as need the crisco) and is my favorite method to roll the gumpaste or MMF.
