IMO, Yes. If it is so moist it is crumbly or something. I just made a cake this past weekend and I am always looking for that moist cake. Well, the bride gave me a recipe she wanted me to use and it was soooo moist it was unstable. I really was nervous about stacking on it. But, I don't know if it was not cooked enough, or something. Other people who are more experienced than I may know how to make it work. It just fell apart when I flipped it, torted it, iced it. It was bad. On the upside, it tasted WONDERFUL!! Cracked me up.
Yes...I just recently made a carrot cake that called for baking in a 9 x 13, leave in the pan and ice top only with the cream cheese icing recipe it provided.
I decided to make two rounds with it and the cake was a little unstable and a bit difficult to ice. We cut it and it tasted fabulous - so moist and soft and it fell apart. It was cooked through. It just isn't the type of cake for decorating.
