What Cake Other Than Chocolate Could Go With Caramel Filling

I've got an upcoming wedding cake in which the groom (not the bride... I know... he's totally into the cake) has requested caramel filling. Doesn't care about the cake- just the filling. Do you guys have any other ideas for cake flavors to compliment it? Would you use a caramel mousse/buttercream type filling or a more "real" caramel? This is my first request for such, and I'm kind of stuck! (Besides the fact that the pic they showed me of what they want is well... not sure how to put it nicely, so I'll just say it... UGLY)!! Thanks for any input!!

although i haven't experimented with it as yet, i like the idea of irish cream cake with caramel buttercream (based on the Bailey's Caramel product)

Well so I probably shouldn't be reponding since I am new but my favorite thing is experimenting with flavors so I have to comment. Of course chocolate with caramel is fabulous!!!! I would say make a caramel buttercream - whatever buttercream you make, flavor it with caramel, don't do just ice cream topping on the cake. Also you could do spice cake or butter cake or white cake would all be terrific! Caramel is my fave - and I prefer it with chocolate. If you really want to get crazy you could do apple cake with caramel - yummo! Just ideas...sorry, I always go way to long with my posts...

I also saw a recipe today online that was a pumpkin spice with a caramel filling and cream cheese frosting.

banana...with or without spice

apple...with or without spice

cake...mousse/buttercream...cake...straight caramel filling...cake...mousse/buttercream...cake!!! That way you don't have to make a choice icon_smile.gif))

I would definitely use a mousse/buttercream filling. As far as flavor combos any of the ones listed above sound great. One of my many books also listed strawberry, lemon, and almost any nut variety pairing well with caramel.

Thanks guys- they all sound so good! I personally love Chocolate with caramel... but I guess this guy's not real into chocolate so was trying to come up with some other ideas! Anyone have a good recipe for the butter pecan cake?

Today I just tried a DH Caramel cake mix doctored with one small package of butterscotch instant pudding and it was great! Baked it in a bundt pan and then drizzled it with a powdered sugar glaze with the liquid being part milk, and part liquid coffee creamer, the International Delight's Vanilla Spiced Rum flavor. It was delicious but think this cake flavor would be great with a caramel filling.
