No knowing much about your cake at this point.. my first instinct would be to use fondant/gumpaste; chocolate is not as stable/strong and more susceptable to temperature, etc....

Wow, I was out of here for awhile and now there's like 4 new pages I missed, geesh.

I used a simple peanut butter filling recipe for years for my eggs, cups, and pb bites that everyone loved.

Peanut Butter Filling:

1 - 18 oz jar creamy peanut butter ( I only used Jiff)
4 tbsp. butter, softened
3 cups 10x sugar

*Mix peanut butter and butter then add sugar one cup at a time. By the third cup you need to mix it in by hand.

Holds up really well in fridge just keep covered or in a container.

Laura.. thanks I thought they were the same but never know.I might of answered when I had sniffed powdered suagr all day and was a litle foggy! LOL!

Well my airbrush is in! Came in last week. YEAH! Too bad I don't have any colors yet to use it with. icon_lol.gif
Today was a spend money day on chocolate items.hh
I just ordered some cocoa butter from chefrubber. It will be in this weekend so I'll be making boxes of chocolates with my mom. She is in charge of volunteers where she works. Each person will get a box with 6 chocolates in it. For fillings: so far we have carmel-bourbon-pecan, oreo truffle, Health (just mixing in heath candy with the chocolate) and were going to try the white-choc.-pumpkin ganache as a filling also. Any other ideas? I'm up for anything.

I also ordered the book you all recommended from countrykitchensweetarts. Can't wait for that one to come in. I'm beginning to love the UPS man. (j/k)

I wanted to tell you all about this site I found called Chocolat-chocolat.com Their molds are more reasonable compared to others. They are located in Canada and promise the orders will be shipped within 48 hours. Hopefully, they are as good as I hope they are. I ordered 6 molds and 100 boxes from them. I'll let you all know.

I hope these chocolates turn out good. After how much $ my mom and I just spent today. Yikes! What's even scarier is we know we have not even scratched the surface with how much it can cost. (I really want a temper machine and more molds plus a few other pricey items.) yep, Santa is going to have one heck of a list from me this year. Too bad I always get coal.. icon_lol.gif

mkolmar will you let us know about the molds because I'm thinking of getting some. I don't believe for one minute that Santa only brings you coal. I think you must be a great person to be helping your mom with this. icon_biggrin.gif

I had to cancel 3 of the molds I ordered because they were on back order and would not come in until the end of the month. They were cool shapes as far as molds go, but I need them for next week. I'll let you know when I get them.

I don't get coal, but I probably should icon_wink.gif Actually, DH and I don't really buy each other anything for Christmas we always donate the $ instead.

I have, but chocolat-choclate was the best priced ones. Their polycarbonite molds are $18.75 compared to $32 and higher for the same mold.

I just got my airbrush too. Well actually I bought 3 kits. The price was really good. One is for me, the other for a friend and the last I need to sell really fast to recoup my money. I was willing to do this because of the price.

The whole kit cost me $175.00 ea. I got the airbrush, compressor and 10 bottles of color. I hope it turns out to be the right decision.

Oh, then you are deffinantly being smart. Will you be getting any other molds or were those the only ones you had ordered?

I ordered a few other molds they had in stock. I'll have 4 molds but of only 2 designs. I prefer to have 2 of each mold so I can get my work done faster. Too bad I can't afford 4 of each mold. that would be ideal. (They even have some on clearance for $10-12 along with candy boxes and such) I'll order more from them after this order if everything goes well. They had some really awesome looking designs for the chocolates. My DH is wanting me to make and box up chocolates for some of his clients along with other desserts for the holidays, so that will give me a good excuse to buy more.

auntginn--good luck with selling the airbrush. I'm sure you won't have much of an issue with that.

It is a complete set, there is nothing left to buy... until you run out of the food coloring that is icon_lol.gif

I bought one before and then had it stolen, so this was a replacement. They work great for my needs ( and I do lots of cakes )

Mind if I ask a few homemade marshmallow questions? I'm not sure if it was asked before or not, but...

1. If you flavor the marshmallows other flavors do you want to use the extracts or candy oils? My thought would be either, is this right? If you use something like say pepperment flavoring, would you add the vanilla as well or just the pepperment?

2. The Alton Brown recipe talks about piping it to make mini mallows. Can you pipe it directly in to chocolate molds coated with chocolate? If you do and cover it with chocolate it does it set up probably or stay soft? And how long can you pipe with it before it sets up too much?

Yep, candy oils should work fine because your not using very much, but if you have the option use extracts because the candy oils are fat and the extracts will evaporate.
Yep, that is exactly what I do when I fill chocolate with marshmallow. I would whip it up nice and fluffy, usually takes 15 mins for me, and then walk away for about 10 mins. You can pipe with it for quite a while, homemade marshmallow is effected by time (drying out causes it to set up) not temperature. Once you fill the molds, use a wet finger to push down or fix any spots so everything is level. It stays soft and delicious inside the chocolate.

Here's a Toasted Cconut Marshmallow recipe I have..

1 Cup sweetened flaked coconut
1 Cup icing sugar for dusting
2 cups granulated sugar
3/4 cup water
2 TBSP white corn syrup
4 pkgs (7g each) unflavored gelatin
2 egg whites
1/4 tsp coconut extract

Spread 3/4 cup coconut on a baking sheet. Bake at 350 oven stirring occasionally, until golden....3-5 mins. Set aside.
Grease 13x9 cake pan and line with parchment paper. Lightly grease paper and lightly dust with isome of the icing sugar. Set aside.
In saucepan,bring granulated sugar, water and corn syrup to a boil, over med-high heat, stirring just until sugar dissolves. Boil without stirring but brushing down sides of pan with pastry brush dipped in cold water, until candy thermometer reaches 260 degreesor hard ball stage...about 12 mins.
Meanwhile, in small saucepan, sprinkle gelatin over 3/4 cup cold water. Let stand for 5 mins. Heat over low heat stirring until clear, 3-5 mins.
Whisk into hot sugar syrup (mixture will bubble up.)
In stand mixer, beat egg whites until stiff peaks form. With machine running, gradually pour in gelatin mixture. Beat on high until increased in volume and cool, about 12 mins. Beat in coconut extract and remaining untoasted coconut.
Immediately scrape into prepared pan.
Using greased spatula or palette knife, smooth top. Sprinkle with toasted coconut, pressing slightly. Let stand uncovered at room temp. until firm and set, about 4 hours.
Remove from pan and peel off paper. Transfer to icing sugar dusted cutting board. Using greased knife, and cleaning and greasing between cuts, cut into 40 squares.
Gently press sides and bottom of each square into icing sugar to coat. Dust off excess. Let stand on waxed paper for about an hour until set.

Will store well for a week in airtight container between sheets of waxed paper.

These are great when used to make S'mores!!


Variations:

Vanilla bean: omit coconut and coconut extract. Replace with 1/2 tsp vanilla and seeds scraped from 1 van. bean. Roll completely in PS.

Pink peppermint: Omit coconut , replace extract with 1/2 tsp peppermint extract and red liquid food coloring to desired color. Roll completely in PS.

Those toasted coconut marshmallows sound wonderful. I love coconut! I toast coconut and put it on top of my ice cream. Thanks for sharing.

The molds came in from chocolat-chocolate. I'll be using them tonight to start making some chocolates for my moms event on Tuesday. I'm going to have to have them wrapped up real tight in the fridge because of the filling though. (except for the heath ones that is)

I'm going to make some chocolates with pop-rocks in it also. I got a sample pack from chef rubber for it. I had it before and it is actually really good.

Ok.. so are you guys saying I could coat the inside of a choc mold with choc ( make shell) and then pipe in homemade marshmallow then top off with more melted choc to finish the mild then let set up ????? If so can i pop the mold in the freezer till set ?? Thanks !
