I'm making a few different kinds of cupcakes for a friend's baby shower. She specifically requested the apple crisp cupcakes I have made for her in the past. Problem is, they are usually topped with a caramel frosting. In this case, we need to make the frosting light blue. I think that a whipped cream frosting will taste good with the cupcakes.
I've never decorated with whipped cream frosting before. Could you recommend a whipped cream frosting recipe that pipes well? (I want to pipe swirls with the 1M tip). I plan to pipe them the morning of the shower, then refrigerate. They will sit out for 2-3 hours during the shower, so the recipe will need to be able to hold up to that (the shower will be inside).
I was thinking about using the recipe that uses sweetened cream cheese as a base. Have any of you tried that? Is the cream cheese taste prominent?

When I make a whipped cream based icing I use Cool Whip as my base (holds up longer). I use Cool Whip and add some instant pudding to thicken, then I add just a bit of pureed fruit of some sort..anywhere from pureed pumpkin to frozen strawberries to bananas. Just enough to give it the definite flavor you're using. The possibilities are endless. Experiment with different flavored instant puddings and purees. The results are pretty darn yummy! HTH
When I do whipped cream, I usually just use heavy whipping cream and sugar and beat to a piping consistency. Make sure not to do it for too long though, or it becomes butter.
I'm kind of a "by taste" girl. Start with a half cup and keep adding a little at a time until you like the flavor. Sorry I can't be more specific.
