IF YOUR MARSHMALLOW FONDANT TURNS OUT CRUMBLY AND CRACKS WHEN YOU TRY TO ROLL IT OUT CAN IT BE FIXED OR SHOULD i START OVER? I ALREADY KNEADED QUITE A BIT OF SHORTENING INTO IT.

I'd say maybe try added a little more water or vanilla. I've never had it to crumbly so the water is the only thing I can think of next to the shortening. Sorry I can't be more help.

sounds like you added too much ps. when i make mmf, i never use the full amount called for. i start out with half and then add until it gets a good consistency. i agree with previous poster, that you should try water, if that doesn't work, i would start over.

I am curious to know how you came out with your MMF...I had the same thing happen, my MMF was crumbly and I had to throw it out. I am just really having a lot of fondant troubles in general. I am now wondering if I am going to regret telling the school I would do the fondant-covered double bundt pumpkin cake....

Do you guys sift your powdered sugar before you mix it in? I made some chocolate mmf for the first time and wound up not using it because it was too "grainy". I thought that maybe it was because I was supposed to sift my powdered sugar and cocoa. Also has anyone ever used the marshmallow fluff instead of melting marshmallows? Is it easier to work with?

Its happened to me. I don t like adding shortening, just makes it icky. I kneed in just a few drops of corn syrup at a time. very small amount will go a long way

I will try the corn syrup. It surely can't make it worse.

How did you do with corn syrup? I did a weird thing....I had about the same amounts of MMF and regular fondant left and I microwaved the MMF so it was workable again and then mixed them together! It improved the taste of the regular fondant and seems to roll really nice. I have yet to roll it out and try it on the cake...

Well I tried the corn syrup and after some kneading it seemed to do the trick. Thank you Sayhellojana. That was a great suggestion. I haven't tried it on a cake yet but I am sure it will be OK.

I have had the same problem before so I put some of the MMF in the microwave (on a plate of course) and micro'd it for 10 seconds. It makes it very soft and then you are able to knead it back together. You may need to add a little water or corn syrup. Good Luck!
