I am in the middle of a wedding cake that I am doing for another decorator because she had to go out of town. SHe brought me the cakes and icing all ready made so all I have to do it ice, put together and deliver.
My problem is I dont know what kind of icing it is but I cant get it smooth it has air bubbles in it and the one layer is carrot cake and it just doesnt want to stick. This layer is not getting any decorations at all so it needs to be smooth and I cant get it smooth. HELP should I add dots to it like the other layers?

This may be too tedious and time-consuming, but I find when the icing has lots of air bubbles, it helps to hand beat it smooth in small batches. I scoop about 2 cups of icing into a bowl and beat with a small-paddled silicone scraper (OXO Good Grips - can't get enough of them!). It only takes about 30 seconds per batch to get smooth icing.
I like to rest my mixing bowl on a piece of non-skid mat so I don't have to hold onto it so tightly with my other hand.
As for the carrot cake layer, you may need to thin the icing in order to get a crumb coat to stick to it. Then, you can go over it with the regular consistency icing.
Ugh, I can only imagine how difficult it must be to work with stuff you're not familiar with!

This is what I was thinking. Do what I think is best. If I had time I would have baked another cake because this one isnt so great. The rest of the layers are ok. Maybe I should have used the icing I am use to!.

You did a great job. Yes, the flowers are too big but that is not your fault. GREAT JOB !
You ran into a little challenge in the beginning but the cake looks great and I agree the florist sent flowers to big but you did a great job.
stargazers are toxic? I never put fresh flower son my cakes. this was for another decorator. The stem was not put into the cake it had a vial on the ends so I left them on.
