Ok Ladies, I am hoping this is one we all will enjoy!! Even thoug we don't technically have FALL in Texas,I have been wanting to try this one for a little while. It only makes 6 cuppies, but I plan on doubling it !! I have had this book marked on Epicurious.com. I will paste the recipe here and post the link also. I will PM Michelle in a moment with my number between 1 & 1000,and the last date to PM me your number will be October 22nd. Cranberry Cupcakes with Maple Cream-Cheese Frosting

Gourmet | November 1995

Can be made in 45 minutes or less.

Servings: Makes 6 cupcakes.

Ingredients:
1/4 cup dried cranberries
6 tablespoon all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
a pinch freshly grated nutmeg
3 tablespoons unsalted butter, softened
1/3 cup sugar
1 large egg, beaten lightly
1/4 teaspoon vanilla
2 tablespoons milk

For Frosting:
1/4 cup (2 ounces) cream cheese, softened
1 tablespoon unsalted butter, softened
2 teaspoons pure maple syrup or honey

Preparation: Preheat oven to 350°F. and line six 1/2-cup muffin tins with paper liners.
In a small heatproof bowl cover cranberries with boiling water and soak 5 minutes.

While cranberries are soaking, into a bowl sift together flour, cornstarch, baking powder, cinnamon, nutmeg, and a pinch salt. In another bowl with an electric mixer beat together butter and sugar until light and fluffy and beat in egg, 1 tablespoon at a time, beating well after each addition. Beat in vanilla. Stir in flour mixture and milk alternately in several batches, beginning and ending with flour and stirring until smooth after each addition.

Drain cranberries and pat dry. Chop cranberries fine and stir into batter. Divide batter among muffin tins and bake in middle of oven until a tester comes out clean, about 20 minutes.


Making frosting while cupcakes are baking:
In a bowl beat together frosting ingredients until smooth and chill.

Turn cupcakes onto a rack and cool 10 minutes. Spread cupcakes with frosting.

I can't wait to try these. My Mom loves cranberries, and I think these would make her day thumbs_up.gif I hope I can get to them this weekend.....it depends how much birthday cake is left over from tonight icon_lol.gif

Dawn I will try to get to these but I can't promise because most of my free time is spent at the hospital with BIL. I does sound yummy though and if I can't get to it before the time runs out I will definately save this recipe. Thanks Meemaw icon_biggrin.gif

lizzyanne1.. CCCC#7= Cake central cupcake club...Its the recipe listed top of this page. Every 2-3 weeks a person chosen by a number pick gets to pick a recipe for every/any one who wants to try it and post the results . And also tell what changes they might make to have it turn out better . This is the 7th choice. Its also a good way to get new recipes.

I think we're all pretty busy! I'll get to them within the next 2 weeks though. I wonder if they're not more of a muffin? I noticed there's not much liquid in the recipe.

Yeah, so many cake related things to do and handling the holidays beyond our caking!!

I was wondering if everyone would like to put the cupcake club on hold until January 5th at which time I would notify the next person and we could all start fresh then. I know it is increasingly hard during the holidays to try new things and thought maybe we could just go on a short hold. Please let me know what you all think.

Hey Dawn ! That would be fine with me ! We all might miss a lot of good recipes if we try to fit to much in at one time ? I know from now till after The new yr Im super busy with family b/days and all the Holidays and xmas shopping and getting all my homemade gifts made! It seems never ending between now and then , though it is my fav time of yr! So what ever everyone wants to do is fine with me.

I think that's a great idea Dawn. I've been to busy to even do 1 week, it's always some kind of issue here the last couple of months, lol......but in January, it'll be to cold to want to leave the house, and I'll be wanting to bake a ton (keeps the house nice and toasty then as well!).
