Use No Taste Red

Try a brand other than Wilton. I like Americolor Super Red. I like to add the coloring 4-5 days ahead of using the icing. Let it sit and the color should darken. I usually add as much red as I can before it starts really having an aftertaste. I think it is impossible to have bright red icing without an aftertaste personally. I see bright red cakes on here sometimes and wonder if they taste bitter.

I second the No Taste Red.

I also use the Americolor Super Red, but I have gotten a bitter taste with it as well, though not as a bad as with the Wilton color.

I have a lot of old Wilton colors. How long do you think they last? Anybody know? There isn't an expiration date.
