The last 3 weddings I have done cupcakes for have all had the problem of condensation. I frost and decorate the night before and put them in the fridge. When I put them in my car for delivery, they look fine, but by the time I get to the location they are covered in condensation. What is going on??? Is it the extreme temperature change, is it that my fridge is too cold. I'm going crazy trying to figure this one out. The thought of having to frost everything the day of, will be nuts!! Please help. Any advice appreciated.

It is the drastic temperature changes that can cause the condesation. I think if you take them from the fridge sooner, let them come closer to room temp, the condensation should be less, and gone by the time of delivery.

I keep all of my cakes in the fridge and they all develop condensation -- it's normal, of course.
I just make sure that I take them out a minimum of 2 hrs prior to the event.
You can use a blow dryer on cold to help speed drying along.
