Here you go:

This recipe for royal icing comes from Colette Peter's book, Collette's Birthday Cakes

5 T meringue powder
3 OZ water
1 pound confectioner's sugar

OR (optional version)

2 large egg whites at room temp
1/2 teaspoon cream of tarter
2 teaspoons water
1 pound confectioner's sugar

(NOTE: I use the meringue powder version, although I have made the egg white version when I was low on meringue powder -both versions are equally good. )

Combine all ingredient in a large mixing bowl and beat at slow speed with the paddle until very stiff peaks form and the icing is pure white. Add more sugar if necessary to stiffen the icing, or a few drops of water if it becomes too stiff. If you don't use it immediately, cover the bowl with a damp cloth to prevent the icing from crusting over. Let royal-icing decorations dry at room temp for at least 24 hours.

Yields 2 cups.

Oooooh! I love this thread, so happy to see it pop up again! This gingerbread season has been a huge success in our household. My daughter and I both entered the National Gingerbread House Competition at the Grove Park Inn for the first time.

I won Grand Prize with my Christmas Matryoshka dolls and my daughter placed in the top ten in the youth division for "Sugar's" doghouse. Here is the link to Grove Park Inn's website to see the winners from this years competition:

I didn't get any notifications that this thread had run more than once during the season! : ( Rats!

MadamRaz, I SAW your dolls posted after the win and just absolutely ogled them! What incredible talent! How did you shape them? I thought your daughter's entry was precious as well.

As for me, I got very little done in the way of gingerbread this year... I did accomplish my gift cottages for the kiddos in my life. That alone took me longer than planned. My other project was a sleigh I started from a vintage pattern cut from an old magazine. The pattern translated beautifullly; however I just never got around to finishing it.

When I have leftover dough, I freeze it and try for a Spring House. I guess that will be what I have to aim for this year.

Actually Win, it was I, GeorgiaGingerbread, that created the dolls! Ha Ha! Thank you to everyone for the kind comments. The dolls were shaped using hemisphere cake pans. It was a fun project and a huge learning experience for me! My daughter and I both have our concepts nailed down for next year and we are both so excited for next gingerbread season. I actually just picked up my dolls from the Grove Park Inn, and I am extremely happy to have them back home!
