Hi everyone - its been weeks since I've taken time to read here! My wedding down in Florida on the beach went great with some not-so-minor changes, but hey, the job got done and I won't bore you with the details.
Finally, here is the wedding cake that I ended up doing while I was there. I think it turned out pretty good and everyone loved it!
Since I had such a small cake (40 guests), I made a different flavor for each layer and ended up with 5 flavors total.
So now I'm back home and doing wedding cakes for everyone else. Not much of a break, but that's what we love doing, right?!
Wish we could post "people" pics so you all could see our wedding photos. They are wonderful - but the cake will have to do.
That is beautiful! I just have to know all about it. I have a nautical party coming up next month and this would be perfect!! How on earth did you pull off doing your own wedding cake and a different location. My wedding in my home town was enough stress alone for me. You must have wonderful patients. Congradulations on the wedding and the cake.
What a gorgeous cake! I have to know...How did you make the shells??? They look so real. Are they fondant or molded candy??? Great job!

Beautiful cake! The cake itself is impressive, but to do that for your own wedding!!! I bow to you in awe!! There are some brides that lose their minds a month before the wedding and for you to pull this off is truly amazing!!

The shells and coral are amazing! I'd love to learn how to make those items as well. We are doing an Ariel theme for my dtr's bday next month and would love to have realistic shells on the cake as well.
Ok everyone, here it comes!
The shells are white chocolate. As much as I would like to take the credit for the shells, I ordered them online at

You can email Brenda for a price list. When I received them, I saw how simple they must've been to make them so I made more of my own for decorations in the netting. So easy!
The coral is made from royal icing and simply piped onto wax paper or parchment. I let them dry for one day and they were ready! Just be careful; they are very fragile so make plenty of extras in all sizes! The cake was supposed to be set up at the same place I baked it (ourdoor), but due to a forcast of rain, I was forced to transport the cake 1/2 hr. away and set it up in a hall. While this was pretty stressful, it did take my worries off of the heat melting the frosting!
The base cake was a 12" octagon made with one layer white and the other a citrus blend I created by using orange/pineapple juice in place of water, then marbling in a mixture of white batter mixed with peach and apricot jello. The next layer is 10" with one layer chocolate hazelnut and the other "hummingbird" cake. The top layer was 6" and all snickerdoodle flavor. I made a butter white cake and swirled in a cinnamon mixture I normally use for cinnamon rolls. Everyone loved that one!
We also made some white chocolate palm trees which added some green to the table. I also made some "real" looking coral by dipping grape stems in white chocolate that I think someone here suggested! The sand is graham cracker crumbs. We then added the netting, lights and candles and we were done!
All in all, it was so simple and small! We only needed to serve 40 people. I was so happy and still am! Wish we could have a special place to post personal pics of we so choosed. We had some really great beach pictures.
I had to do a wedding cake for the very next weekend after we got back! ugh! too soon! That is the basketweave with blue roses in my pics. I have another to start this week. yikes.

Thank you so much for sharing! Any ideas on colors for the dusts? I haven't used them much so I will be guessing on what colors to order!
I used two kinds of gold, coral, antique, pearl, and opal. I think she used some darker colors that I didn't have - maybe some browns or coppers? You can also mix them to create a marbled effect. They come out very realistic looking! Good luck!

Would you mind sharing your recipes for the Citrus Blend, Snickerdoodle (my dad would just love this one), and Hummingbird? (i have never heard of hummingbird cake)

Your cake is beautiful! I am amazed at you brides who take on the cake making on top of everything else. Great job and congratulations on your marriage. I hope you have many many happy years together.
Sure - here you go:
HUMMINGBIRD CAKE
*****************
3 cups all purpose flour
2 cups sugar
1 tsp baking soda
1/2 tsp salt
1 1/2 tbsp cinnamon
3 eggs, beaten
1 1/2 cups cooking oil
2 tsp vanilla
2 1/2 cups chopped bananas
8 oz small can crushed pineapple, undrained
Sift all dry ingredients. Set aside. Beat eggs, add oil and vanilla. Add dry ingredients and beat about 2 min. Add bananas, pineapple, nuts and fold in with a fork-don't beat. Bake 50 minutes at 350 degrees.
Spoon into 3 9 inch round cake pans or 2 large square cake pans. Bake at 350 for 30 minutes.
As for the snickerdoodle cake, I pretty much made it up. I used a white cake mix and used butter instead of oil. Then I swirled in the cinnamon filling that I purchase from

It's called Baker's Cinnamon Filling and its "the bomb"! I use it for rolls, on top of banana bread, or anywhere you want a nice thick syrupy yummy cinnamon glaze or filling. You just add water! Anyhoo, that's my secret - don't tell anyone! I know your dad will love it!
oops, forgot about the citrus one! I really didn't use a recipe - its pretty much what I've already said... juice instead of water, then put maybe 1/2 box each of peach and apricot jello in another batch and marble it in. Oh, I also added some orange emulsion that I bought at sugarcraft.com I think, but any orange flavoring would do. I just wanted the darker part to be really robust, and the lighter part to have a nice mild tropical flavor.

I am going to have another reception for those who couldnt travel to Florida so I'm trying to decide whether or not to do a replica, or just whip out some cake and say "here you go".
Oh I believer I'd whip something up and say have at it. I'm sure whatever you just whip up will be beautiful and yummy. By the way, can you post your Hummingbird recipe in the recipes folder so we can save it?
