Hi everyone,

I'm new to this site but already enjoying it so much. I wanted to know if anyone knew of a simple and tasty strawberry filling to layer between cake made from real strawberries, not the gel? Thanks for any help I receive.

Welcome to CC! Here is the one I use, it is very easy and tastes great. I usually use OJ in place of the liquour though ....

Does this strawberry filling recipe thicken good? I mean if I make a dam and fill in with this filling alone, it shouldnt ooze out the sides right? I have one that doesnt thicken enough so when Im using layers I have a problem.

Oh yeah...it thickens just fine! It seems to thicken even more once it has cooled also! I haven't had any problems with it ozzing out at all!

Thank you Mrs. Missey for the welcome and the recipe. I am going to try. Also, this is for a tiered cake (1st time). Can I layer w/strawberry filling and freeze for couple of days? Will it thaw okay or is it safer to prepare day before and just refrigerate? I just don't want the cake layers to become overly soggy.

I usually bake and freeze my cakes but I don't do the filling part until the day that I thaw the cakes. It may work just fine doing it ahead of time but I have never tried doing it that way. Sorry, I know that is not much help!!

Yah, wouldnt fill them until your ready to cover them with either b/c or fondant. Freezing will make your filling a bit watery and you would have some leaking out of your tiers when they thaw. Your better to do it right beforehand.

I got this amazing fresh strawberry filling recipe from mamajan61. Just send her a message and she would be more than happy to give you the recipe. I dont want to give out her recipe, its a family recipe. But it is the most amazing straw filling I have tried so far.
