Hello to all...I want to achieve dark brown fondant and all I get is a pretty caramel color not dark brown!... icon_sad.gif....I'm using the Wilton's brown gel.
Any ideas? I just read about modelling chocolate, but how do you use modelling chocolate?? can you mix it with fondant?? is it flexible like fondant?
I am making decorated cookies and I just need small pieces of dark brown fondant...

I made some dark brown for a monkey that I made. I remember adding A LOT of Wilton brown coloring to the fondant. It got sticky so I had to add back in some powdered sugar. However, I did get the dark brown.

Can't help you out on the modelling chocolate. I have never used it.

You can also buy pre-made chocolate fondant in dark brown that tastes a bit like tootsie rolls. I think both Satin Ice and Choco-pan make a chocolate fondant.

If you are making your own fondant, just add cocoa powder to your melted marshmallows. I added quite a bit, and then added my powdered sugar. Its makes it quite dark drown and then you dont have to add like 3 containers of the Wilton paste.

Add a bit of black to the fondant not too much though.

if you only need a little you might be able to try tootsie rolls, I've heard some people use them to make chocolate roses.

For the cocoa powder you just add a little bit at a time until you get the color that you want. When starting from white I just add a LOT of brown gel. Also if you let it rest a little bit after you mix then it seems to deepen.

Hello! I just made dark brown fondant for a monkey cake last week-end... I always use the Michelle Foster Recipe for fondant... would not use any other... it is fast and it tastes great (as far as fondant taste goes)! I added 3/4 of a cup of dark cocoa first; and beat it in the fondant... then, I added a little more and never did have to add my Wilton's coloring. It looked great and was really dark brown. (My monkey girl had a hot pink diaper on with matching ears and muzzle, plus a hot pink jeweled crown! She was adorable!)

Do not waste your hard-earned money on pre-made fondant... the MFoster recipe is so verrrrrrrrry easy! You can have 10 batches done in the same time it would take you to go get it locally. I buy my supply of glycerin at my drug store, as they are cheaper than any place else! The Knox gelatin needed is so cheap because I keep a box of 36 on hand at all times.

You must have a heavy-duty stand mixer for this... a hand-held will burn up. Tootsie Rolls are okay, but you cannot depend upon the freshness, nor the flexibility. You can always depend upon the MF fondant recipe.

Cocoa is the answer.

The recipe is on the CC Recipe website... I make it in every color imaginable and keep it in oiled plastic wrap in a zip-type plastic bag. Please let me know how you like it. Sometimes I use the Creme Bouquet as flavoring and it is absolutely so good that I can nibble on it. The purchased fondant does nothing for one's palette, but this recipe is up there on the 1 -10 scale.
