Hello My favorite ladies on the WWWicon_smile.gif Pls have a look at my cupcakes in the second pic, they r cute but I have a problem with the cheese frosting beneath, although I make it 1 day ahead and keep it in the fridge, the minute I squeeze it on the cupcake it starts melting! I want it to hold it's shape like the other pic which I have taken from flickr, pls tell me how can I make a cream cheese in an elegant way? Thanks a zillion ! icon_confused.gif

what recipe are you using? Seems like there is too much liquid in there. My cream cheese icing recipe doesn't have any liquid in it. I can pipe with it.

I can't see your pic, but it sounds like you need a different cream cheese icing recipe. I like Toba garrett's recipe:

8 oz butter
2 oz veg. shortening
10 oz cream cheese
1 1/2 lb conf. sugar
2 T heavy cream
1 t vanilla
1 T lemon juice
1 T meringue powder

This makes a very good, crusing, stable cream cheese icing. The cream cheese flavor is not as prevalent as the recipes using lots of cream cheese, but you wont' have the melting problems.

Yeah, those recipes taste great, but are definitely not for deocrating with. They're for eating icing strait out of the bowl!
