Hello My favorite ladies on the WWW
Pls have a look at my cupcakes in the second pic, they r cute but I have a problem with the cheese frosting beneath, although I make it 1 day ahead and keep it in the fridge, the minute I squeeze it on the cupcake it starts melting! I want it to hold it's shape like the other pic which I have taken from flickr, pls tell me how can I make a cream cheese in an elegant way? Thanks a zillion !

what recipe are you using? Seems like there is too much liquid in there. My cream cheese icing recipe doesn't have any liquid in it. I can pipe with it.

I can't see your pic, but it sounds like you need a different cream cheese icing recipe. I like Toba garrett's recipe:
8 oz butter
2 oz veg. shortening
10 oz cream cheese
1 1/2 lb conf. sugar
2 T heavy cream
1 t vanilla
1 T lemon juice
1 T meringue powder
This makes a very good, crusing, stable cream cheese icing. The cream cheese flavor is not as prevalent as the recipes using lots of cream cheese, but you wont' have the melting problems.
8 oz butter
