CCCC #3 - Tomato, Basil, & Mozza! - Page 2

Mel -

Thanks for sharing this recipe with us. I was hoping that we could do savory cupcakes as well as sweet on here.

So for this recipe, we are to assume that the cheese is considered a dry ingredient. I am wondering if the cheese and sun-dried tomatoes should be tossed in some of the flour before adding, to prevent sinking.

I agree with the garlic, but if you're going to go that far, why not take it all the way?

Sprinkle the tops with grated parmesean, fresh minced garlic, and a tiny pinch of oregano before baking. Then brush them with the garlic butter when done. I have some leftover sweet Italian sausage that I might also toss in.

I'm wondering if some slightly reconstituted tomato paste or pizza sauce could be used in place of the tomato soup?

Tune in Tomorrow -

Ok Theresa, now you're talking!!! That's a muffin I make that I call pizza muffins!! I use pizza sauce (where you'd have the soup in this recipe) cooked crumbled sausage or pepperoni, (or both, let's be honest!) cheese, garlic, basil, oregano, parsley, etc, etc. They are SO good!! But I want to try this recipe too as a more scaled down version!! It's a different taste than the pizza, but I think this should be good too!

Yum! I have to see how much sun dried tomatoes are. (textbooks aren't the cheapest things in the world, or the lightest...or the most fun) But I super want to try these muffins

Thanks Mel!

I just paid $2.07 for 3.5oz of sundried tomatoes at Walmart. I estimated that 3 Tablespoons would be about 1/3 of the package.

I have to wait until tomorrow. I'm making chili tonight and you got to have cinnamon rolls with chili! I think it might be a Nebraska thing but they go great together!

Ok fellow club members !
Im posting my link to the latest choice ,the Muffins.

I ended up with 15 muffins and only had to bake them for about 16 mins.
They rose beautiful! They are very moist and I think they look beautiful to.
Im not to sure about the flavor ?
By looking at them I would think they would be just delicious !
I think they are missing something for sure ,but NOT sure what it is. I think the sausage that someone talked about would be great in these.
I think for me they had a little to much basil.
My husband who loves this type of flavor, doesent care for them at all ( Im so sad ) !
I did follow the recipe as is ! I think I will rate these about a 3 ?
I think with a few additions they could be very tasty !Just have to figure out what would be best to add to them ! I am glad I tried them !

These may be perfect just the way they are for lots of people but Just not for me ! Like I said I think they look beautiful, and are very moist theres nothing at all wrong with them.
I just think the need more flavor for my taste !
Oh and thanks for the comment !
Yes they do look cheesey,it must be the tomato soup in them because I didnt really taste the cheese .

Oh, $2 is no problem. I was thinking they were going to be more for some reason. Silly me.
Fiddle, they are a really nice color. I'm going to try these later this week. With some homemade pasta. I'm excited icon_smile.gif
