I got this recipe from the travel agent we use at work. It's super easy to make and everyone loves the truffles.
Oreo Truffles
1 pkg (1lb 2 oz) Oreo cookies, crushed (regular cookies NOT double stuff)
1 pkg (8 oz) Cream cheese, softened in microwave
2 pkgs (12 oz each) Semi-sweet chocolate chips
1 pkg (12 oz) White chocolate chips for decoration or get some white candy discs from the bulk food section you dont need much.
Crisco shortening about 2 tablespoons
Crush entire package of Oreos into fine crumbs in a food processor. Do this in 3 batches, otherwise it will overflow (at least my food processor overflows). Place in large bowl and stir in softened cream cheese until no white streaks remain. Roll into walnut-sized balls and place on a wax paper covered cookie sheet. Refrigerate for 1 hour or put in freezer for ½ hour.
Melt chocolate chips in microwave safe bowl, 1 bag at a time and add a tablespoon of Crisco shortening to each pkg. Dip truffles in melted chocolate with a couple of spoons. Place back on wax paper covered cookie sheets.
Melt the white chocolate disks and put in a sandwich bag, snip a tiny corner off and drizzle the chocolate on top of each truffle. Refrigerate.
Ive never tried it, but you could use the mint Oreos for a different flavor, or add a bit of peppermint to the mix, or any other flavor for that matter.
