I have a wedding in two weeks and the couple wants carrot cake. There are so many recipes on the site that I can't narrow any one of them down because they all look great. Do any of you know of a really good carrot cake recipe and do you know if it will hold up well for a six tier wedding cake covered in fondant.

Carrot Cake
3 eggs
2 cups sugar
1 cup oil
2 tsp vanilla
2 cups grated carrots
1 cup crushed pineapple (don't drain)
2 1/2 cups sifted flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 cup coconut or chopped nuts (optional)
Combine eggs, sugar, oil,and vanilla. Beat until creamy. Fold carrots and pineapple. mix well.
Sift dry ingredients together, add to batter mix well stir in chopped nuts or coconut.
325 for 45 min to 1 hour

My recipe for carrot cake is basically the same as Macsmom but I don't use pineapple, I use undrained can of mandarin oranges and one tablespoon of orange zest. It's always a hit.
