Whats Your Favourite Cupcake Combo?

I'm really new to making cupcakes and I don't really know where to start. I've found a great Madeira recipe that is great for Cupcakes but you can only use a great recipe so many times before you get a little bored and want something else to make. I have books full of different recipes but would much prefer the thoughts of you wonderfully talented people on this forum. So at the moment here is my favourite cupcake combo and the recipe, Would anyone else like to share their favourite combo's and recipes for us newer to this craft?

LEMON MADEIRA CORE CUPCAKES WITH SWISS MERINGUE BUTTER CREAM.

400g of Sugar
400g of Butter
8 Eggs
300g of Plain flour
95g of Self raising flour
3 tbs of Milk
A squeeze of lemon juice
3tbs of lemon rind

Cream the butter and sugar together until smooth. To the mixture add eight large eggs (one at a time) making sure the egg is fully incorporated before adding the next. Take your bowl off the mixer and coat the lemon rind in the flour and then fold flour into the butter,sugar and egg mixture (the batter will be really thick) add your milk andlemon juice and mix sparingly until incorporated.

Pour the batter into your cupcake cases (I tend to get either 36 smaller cuppies or 20 larger cuppies from this batter) and bake in the oven @ 160 degrees c until golden brown and a toothpick comes out clean

While your cupcakes are baking in the oven separate 4 eggs into two separte heat proof bowls, egg whites is one and yolks in the other, to the yolks add 125g of sugar 1/2 cup of lemon juice, 3tsp of lemon rind and 1/2 cup of butter and put bowl on top of a simmering pan of water and stir occasionally, this will take around 8-10 minutes to thicken and is done once it coats the back of a spoon. Take of the heat and leave to cool on the side DO NOT POUR THE WATER AWAY YET and don't forget to check on your cupcakes in the oven!!!!!!! Now take the egg whites and add 250g of caster sugar and again put the bowl onto the pan of water, stir occasionally until the sugar disolves into the egg whites. Once the sugar is disolved pour the mixture into your electric mixer bowl and whisk until cool, keep whisking and add 125g unsalted butter and 125g of slightly salted butter bit by bit, The mixture will separate and then come back together. Once whipped and creamy cover with cling film or foil and leave to one side

To assemble

Once the cupcake and lemon cheese are cooled take an apple corer and use it to make a core in the centre of each cupcake (I find the best thing is too eat the centres as you do this to minimise on use of uneeded utensils icon_wink.gif ) in the core put a nice dollop of lemon cheese and then pipe a swirly cupcake top. Decorate the peak with a Sugared Lemon Jelly Sweet

et Voila!!!

I know it's only a basic recipe but eveyrone at work loves these, you can always replace the lemon cheese with raspberry jam etc.

If anyone tries these and likes them it would be great to know how they go down.

I like key lime cupcake with mango buttercream. I also like peanut butter cupcakes with peanut butter cream buttercream but the key is to unwrap the cupcake and place it in one of those premade dark chocolate chocolate cups in the refrigerated dessert section. YUM-O!
Other favorite: pina colada with coconut buttercream
